Extra virgin olive oil from California and Crete, olive oils flavoured by crushing herbs and citrus with the fruit rather than steeping them afterwards, roasted nut oils pressed the way a Loire Valley mill has done it since the nineteenth century, chili oils, and neutral oils for when the oil should not have an opinion.

Cooking oil or finishing oil

This is the distinction that matters most. A cooking oil is chosen for its smoke point and its neutrality: it gets hot without breaking down and it stays out of the way. A finishing oil is chosen for flavour, and heat destroys exactly what you paid for, so it goes on at the end or at the table. Extra virgin olive oil, roasted nut oils and chili oils all belong in the second group.

Smoke point, briefly

The smoke point is where an oil starts to break down and taste burnt. Refined oils sit high because refining removes the particles that scorch. Unrefined oils sit lower because the things that give them flavour are the same things that burn. Searing and frying want the high end; dressings and drizzling want the low.

What agrumato means

Some flavoured olive oils are made by crushing whole lemons, basil or chilies together with the olives at the mill, rather than infusing finished oil with an extract afterwards. It takes far more fruit and it is why the result tastes of the thing itself instead of tasting of flavouring.

Storing oil

Light and heat are what turn oil rancid, which is why good producers use opaque bottles and tins rather than clear glass. Keep it in a cupboard rather than next to the hob, close it properly, and treat an opened bottle as something to finish within a few months. Nut oils are the most fragile of the lot.

We will process and ship your order in 2-3 business days, you will receive a shipping confirmation email with tracking as soon as the Carrier scans the shipping label.

Ground shipping time depends on location, here's a breakdown:

West Coast: 1-2 business days
Midwest: 3-4 business days
East Coast: 5 business days

Process time is not shipping time. Shipping time starts from the days successive to the day of shipping, after the order has been processed.

Signature on delivery is mandatory for wine deliveries. Please make sure someone is at the shipping address to sign for the package.

If applicable, please consider delivering the package to a business address to ensure someone is available to sign for the package.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.

If you miss a delivery and a package gets returned to us we have two options:

1) Reship the package right away: due to the very high cost of shipping and returns, we must charge a re-shipping fee to be determined based on package size and shipping destination.

2) Consolidate the returned package with your next order: this option is free of charge and it's the most popular option.
