How to pick a roast level

Roast level is the single biggest decision, and it is not a quality scale. A light roast keeps more of what the bean tasted like where it grew, which usually means fruit, flowers and a brighter acidity, and it wants a pour-over or a filter. A dark roast trades that origin character for body, bittersweetness and something closer to cocoa, and it holds up to milk and to a long brew. Medium sits between the two and is the safest bet if you are buying for a household that disagrees.

Single origin or blend

A single origin comes from one farm, cooperative or region and tastes specifically of that place, which also means it changes when the harvest changes. A blend is a standing recipe built for consistency, so it is the one to buy when you want the same cup every week rather than something to think about.

Why it is sold whole bean

Ground coffee loses its aromatics within minutes because grinding multiplies the surface area exposed to air. Grinding to order is the cheapest single improvement available to anyone who already owns a decent brewer. Grind size matters as much as freshness: espresso wants fine, filter wants medium, French press and cold brew want coarse.

Storing it

Air, light, heat and moisture are what degrade coffee, in that order. An opaque, airtight container at room temperature beats the fridge, where condensation and other food smells both work against you. Buy what you will drink in a few weeks rather than stockpiling.
