Product Description

Alessandro Viola Blanc de Blancs NV is an organic sparkling wine from Sicily's Terre Siciliane IGT, produced using the méthode champenoise at his estate near Alcamo. Made from 100% Catarratto grapes grown on limestone soils in the Fastuchera district. The wine undergoes second fermentation in bottle followed by at least 20 months aging on lees before disgorgement. Produced as Pas Dosé with no dosage added, reflecting Viola's minimal intervention philosophy. Hand-harvested grapes ferment with indigenous yeasts, creating one of Sicily's most refined traditional-method sparkling wines from this native variety.

Tasting notes

Pale golden color with persistent fine bubbles. The nose reveals aromas of sage, rosemary, pear, apple, and briny sea air with mineral notes. The palate shows fresh citrus, honey touches, bitter almond, and distinctive saline minerality with lively persistent mousse.

Food pairings

Perfect with shellfish, crab, lobster, seafood appetizers, or traditional Italian linguine alle vongole with clams. Excellent aperitif wine for special occasions.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package gets returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee to be determined based on shipping address and number of bottles. Shipping wine is extremely expensive, we are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to re-route a package after it's been shipped, we can do so upon payment of a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancelling fee – the amount depends on how big the order is. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat/frost-related issues. We offer ice-packs upon request. please let us know should you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct, otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times with no success or if you fail to retrieve your package at the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Alessandro Viola

Alessandro Viola operates a seven-hectare estate in northwestern Sicily, south of Palermo near Alcamo in the province of Trapani. His father was a vine grower who bottled very little of his own wine. Alessandro developed a fascination with grape growing from an early age. After several vintages of self-teaching, he pursued formal education in viticulture and enology.

During university, Alessandro focused on the science of winemaking rather than the mechanical approach being taught. He believed that healthy grapes, good soil, and careful winemaking eliminated the need for additives. After graduating, he worked in northern Italy and later at a larger winery on Mount Etna. Eventually, he returned to making wine by hand without additions—first with a friend under the label Uva Tantum, then under his own name.

The vineyards occupy two distinct sites. Pietra Rinosa near Alcamo sits at 200 meters elevation on clay soils, strongly influenced by the nearby ocean and the Gulf of Castellammare. The Fastuchera vineyards climb to 400 meters on calcareous soils, producing finer, more mineral-driven wines. Alessandro farms all vineyards organically and biodynamically, working strictly by hand.

The estate grows exclusively indigenous Sicilian varieties: Catarratto, Grillo, Carricante, Nero d'Avola, and Nerello Mascalese. Alessandro's winemaking philosophy centers on minimal intervention. Fermentation occurs spontaneously with native yeasts. Wines are bottled unfined and unfiltered. Most cuvées receive little to no added sulfites.

Production remains small. Alessandro personally oversees every aspect of viticulture and vinification. His approach reflects a simple conviction: wine should express grapes and terroir without artificial alteration. The estate has become a reference point for natural wine in Sicily, producing pure, expressive wines that capture the island's coastal character and indigenous grape heritage.

Sicily is Italy's largest island and its third-largest wine-producing region after Veneto and Tuscany. The Strait of Messina separates it from the Italian mainland. The island spans approximately 25,711 square kilometers, with vineyards planted across diverse terroirs from sea level to over 1,000 meters elevation on Mount Etna's slopes.

The climate is predominantly Mediterranean. Coastal areas experience hot, dry summers and mild winters. Higher elevation sites benefit from significant diurnal temperature variation, preserving acidity in the grapes. The island receives abundant sunshine—among the highest in Italy. Rainfall concentrates in winter months. Sea breezes moderate temperatures in coastal vineyards, particularly in the western provinces of Trapani and Agrigento.

Soils vary dramatically across the island. Mount Etna features volcanic soils rich in minerals from ancient lava flows. Western Sicily around Alcamo and Marsala has clay, limestone, and sandy soils. The southeastern corner near Vittoria contains calcareous and sandy terrain. This geological diversity contributes to the range of wine styles produced.

Indigenous grape varieties dominate Sicilian viticulture. Nero d'Avola is the most widely planted red variety, producing full-bodied wines with dark fruit character. Nerello Mascalese thrives on Mount Etna, yielding elegant, Pinot Noir-like reds. White varieties include GrilloCatarratto, Carricante, and Inzolia. International varieties like Syrah and Chardonnay have also found success.

Key appellations include Etna DOC, Cerasuolo di Vittoria DOCG, Marsala DOC, and numerous IGT designations. The Terre Siciliane IGT allows producers flexibility with grape varieties and winemaking techniques.

Sicily has become a center for natural winemaking. Producers like Alessandro Viola, Frank Ferreri, and COS work with organic and biodynamic practices, spontaneous fermentation, and minimal sulfites. The island offers remarkable diversity—from powerful reds to crisp whites, skin-contact orange wines, and the historic fortified wines of Marsala.
