Fly By Jing is Jing Gao's company, founded in 2018 and based in Los Angeles, with this sauce made in Chengdu.

The brand calls it hot, spicy, crispy, numbing and savory, intensely flavorful yet not off-the-charts spicy. Chili pepper, fermented soybean, garlic, shallots, ginger and Sichuan pepper in rapeseed and soybean oil.

Vegan, sugar free, no artificial flavors, no preservatives. The label tells you to put it on everything, vanilla ice cream included.

The Brand

Fly By Jing

Fly By Jing was founded in 2018 by Jing Gao, who was born in Chengdu, grew up between Europe and Canada, worked as a brand manager at Procter and Gamble, then cooked in China and opened a restaurant in Shanghai before moving to California. The name points at Chengdu's fly restaurants, the hole-in-the-wall places the brand describes as so good they attract diners like flies. Gao ran pop-ups and an underground dinner series first, then funded her first sauce on Kickstarter in 2018 with about 1,700 backers pledging 120,000 dollars.

The company makes Sichuan sourced condiments and noodles, sold direct and through retailers including Whole Foods, Target and Costco. Sauces are made in Chengdu using regional ingredients: Erjingtiao chiles, the Sichuan peppercorn variety known as Tribute pepper, and cold-pressed non-GMO rapeseed oil. The line runs vegan, sugar free, with no artificial flavors and no preservatives. Gao also wrote The Book of Sichuan Chili Crisp, a James Beard Award winner with 85 recipes covering dumplings through cocktails and desserts.

Gao went by Jenny for most of her life and returned to her birth name around 2021, a shift the brand prints on its own labels. She remains founder and CEO. The company took growth investment from Prelude Growth Partners and was part of the Techstars LA 2019 class.
