The Schönburger drives a distinctive aromatic lane — lychee, rose petal, peach — that you rarely encounter in a pet nat context, especially one from British Columbia. The méthode ancestrale keeps it lively and textural without any dosage or intervention, so what you get in the glass is exactly what fermentation produced.

Sparks is a pétillant naturel made by Tyler Thrussell of Neon Eon from a three-variety blend of Schönburger, Sauvignon Blanc, and Chardonnay grown in the Okanagan Valley, British Columbia. It is made using méthode ancestrale: fermentation begins in tank with native yeast and is completed in bottle, trapping the CO2 and producing a gentle, natural sparkle. No dosage, no added sulfites, no fining, no filtration.

Schönburger is a pink-skinned German crossing of Pinot Noir and Pirovano 1 (Chasselas Rose x Muscat Hamburg), developed at the Geisenheim Institute and released in 1979. It is an early-ripening, aromatic variety planted in cool-climate regions including British Columbia, and contributes pronounced floral and stone-fruit character — rose petal, lychee, peach — with a soft, rounded texture. In this blend it works alongside the grassy lift of Sauvignon Blanc and the mid-palate weight of Chardonnay.

Neon Eon sources grapes from organic or biodynamic vineyards across the Okanagan Valley. The winery adds nothing: no commercial yeast, no sulfur, no enzymes or nutrients. Nothing is removed either. The wines are bottled alive and should be stored with care and served well chilled.

Serve well chilled alongside raw oysters, spot prawns, or a light crab salad. The Schönburger's floral aromatics and soft texture also work with mildly spiced Southeast Asian dishes — think Vietnamese summer rolls or Thai larb with herbs. Works as an aperitif on its own.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Neon Eon

Neon Eon was founded in 2018 by Tyler Thrussell in Summerland, BC. Thrussell grew up around wine: his father Rick started Sage Hills Vineyard in Summerland, a low-intervention property on the west side of Okanagan Lake. Tyler began Neon Eon as a separate creative project after working in the wine trade and spending time in Austria, where an encounter with an unfined, unfiltered Gewürztraminer shaped his approach to natural winemaking.

All Neon Eon wines are made from organically or biodynamically farmed grapes. Thrussell sources fruit from the Okanagan Valley and works without commercial yeasts, sulfur additions, enzymes, nutrients, or any other inputs. The wines are bottled unfined and unfiltered, with total sulfite levels at or near zero.

Fermentation is spontaneous throughout, relying entirely on ambient yeast populations. For the Sparks Pet Nat, fermentation begins in tank and finishes in bottle, producing carbonation naturally without any secondary addition of sugar or yeast (méthode ancestrale). No disgorgement or dosage is applied.

Wine region

Okanagan Valley, Canada

The Okanagan Valley is British Columbia's largest wine region, stretching over 250 kilometres north to south along a series of glacial lakes in the province's southern interior. The valley has a continental climate moderated by Okanagan Lake, which extends the growing season and buffers temperature extremes. The Cascade and Coast Mountains to the west create a rain shadow, leaving the valley with very low annual precipitation — below 250mm in the south near Osoyoos and up to 400mm in the north — so most vineyards depend on irrigation. Daytime summer temperatures regularly exceed 30°C in the south, while significant diurnal shifts preserve natural acidity in the grapes.

Soils across the valley are primarily glacial till — sand, gravel, silt, and clay deposited during the last ice age — and are well-draining and nutrient-poor, which encourages deep vine rooting. The valley holds 12 recognized sub-geographical indications (sub-GIs), including Naramata Bench, Golden Mile Bench, Okanagan Falls, and three Summerland sub-GIs: Summerland Bench, Summerland Lakefront, and Summerland Valleys. The region grows over 80 grape varieties, with Pinot Gris, Chardonnay, Riesling, Merlot, and Pinot Noir among the most widely planted; it also supports rarer cool-climate varieties including Schönburger, Gewürztraminer, and Zweigelt.

Signature on delivery is mandatory for wine deliveries. Please make sure someone is at the shipping address to sign for the package.

If applicable, please consider delivering the package to a business address to ensure someone is available to sign for the package.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
