This is a skin-contact pet-nat built from five local grapes co-fermented together — the result is golden, dry, and mineral with soft persistent bubbles, notes of melon, stone fruit, and a faint smokiness from 10 months on the lees. Ratatuja is a field-blend sparkling wine from Carolina Gatti's 5-hectare estate in Ponte di Piave, in the Marca Trevigiana area of Treviso, Veneto. The blend combines Glera, Pinot Bianco, Verduzzo, Chardonnay, and Tocai — all five grapes co-fermented and macerated on the skins for several days before being bottled with residual sugar to complete fermentation in the ancestral method. The wine ages on the lees in bottle for 10 months.

The vines are trained using the ancient belussera (Bellussi) system — a nearly extinct spur-pruning trellis method requiring intensive manual labor that produces low yields. Soils at Ponte di Piave are limestone and clay, typical of the alluvial Piave river plain. Treatments in the vineyard are limited to copper salts and sulfur; no herbicides are used. Organic manure from the estate's own livestock serves as the primary fertilizer.

In the cellar, fermentation is spontaneous with indigenous yeasts in concrete vats. The wine is bottled unfined and unfiltered with minimal to no added sulfites. Golden in color from the brief skin contact, Ratatuja shows soft bubbles and a dry, mineral character with notes of melon, stone fruit, and a smoky undercurrent from lees aging.

The name is a wordplay on ratatouille — the dish that combines many vegetables together, just as this wine combines many local grape varieties. In Veneto dialect, the word also carries a local identity that grounds the wine firmly in its place of origin.

Serve alongside fried seafood such as fritto misto, or with vegetable antipasti and soft fresh cheeses. The dry mineral character and low alcohol make it a natural match for briny shellfish and light grain dishes like risotto with herbs or mushrooms.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Carolina Gatti

Azienda Agricola Gatti is a family estate in Ponte di Piave, Treviso, that has been in the Gatti family since the late 1800s. Carolina Gatti enrolled in the oenology school in Conegliano at age 14, becoming first a wine technician and then a licensed oenologist. She graduated with her oenology degree in 2012, writing her thesis on Raboso del Piave. She took over day-to-day management of the estate that same year, with her father Lorenzo, mother Renata, and brother Lino each contributing to operations.

The estate covers approximately 5 hectares trained exclusively with the belussera system — a nearly extinct trellising method developed by the Bellussi brothers in the 1800s that involves spur-pruning four plants per post and guiding them across wires like a web. The method demands rigorous manual work and produces low yields. Some vines on the estate are more than 80 years old. The farm operates as a largely self-sufficient unit, raising free-range livestock whose manure fertilizes the vineyards. Vineyard treatments are limited to Bordeaux mixture, copper salts, and sulfur; no herbicides are applied.

In the cellar, Carolina ferments all wines spontaneously with indigenous yeasts in concrete vats. No fining, centrifugation, or filtration is applied. Sulfite additions are minimal to none. For Ratatuja, all five grape varieties are co-fermented and macerated on the skins for several days, then bottled with enough residual sugar to complete fermentation in-bottle using the ancestral method, and aged on the lees for 10 months.

Wine region

Veneto, Italy

Veneto is Italy's largest wine-producing region by volume, stretching from Lake Garda in the west to the Adriatic coast in the east, and north to the Dolomite foothills. The Marca Trevigiana is the eastern Treviso province, covering flat alluvial plains deposited by the Piave river. Soils here are primarily hard clays and light sands, with limestone and clay prevalent around Ponte di Piave. The region sits at approximately 45-46 degrees north latitude at low elevation, with a climate moderated by Adriatic breezes and alpine air from the north.

Marca Trevigiana IGT — introduced in 1995 — covers the full Treviso province and permits wines in red, white, rosé, still, frizzante, and sweet styles. The area is dominated by Glera, the base grape for Prosecco DOC, alongside indigenous varieties including Raboso Piave, Verduzzo Trevigiano, and Tocai (Friulano). Natural winemakers in this corridor push against the region's largely industrialized output, fermenting with native yeasts in concrete and bottling without fining or filtration.

Carrier will try to delivery a package up to three times before returning the package to us.
