This is one of the very few varietal Solaris pet nats in Italy, and its high-altitude volcanic porphyry terroir in Val di Cembra comes through clearly: elderflower, fresh pear, apricot, and lemon with a firm mineral backbone. At 12% ABV, the bubbles are delicate rather than aggressive, and the dry finish keeps you reaching for the next pour.

Zero Infinito is a pétillant naturel made from 100% Solaris grown in the Grumes vineyard in the Val di Cembra, at approximately 900 meters elevation. The soils there are broken-down volcanic porphyry, dark brown and mineral-rich. Grapes receive cool morning air descending from the Marmolada massif and mild afternoon ventilation from Lake Garda, a combination that preserves high natural acidity while allowing full phenolic ripeness.

Solaris is a PiWi (pilzwiderstandsfähig, or fungus-resistant) variety bred in 1975 at the Staatlichen Weinbauinstitut Freiburg by Norbert Becker. It is a cross between Merzling (itself a Seyve-Villard and Riesling hybrid) and Gm 6493 (Zarya Severa x Muscat Ottonel). Its strong resistance to powdery mildew, downy mildew, and botrytis makes it possible to farm with zero chemical treatments, which is precisely how Pojer e Sandri grow it.

In the cellar, the approach matches the vineyard: no added yeasts, no enzymes, no sulfur, no fining, no filtration. The fermenting juice is bottled before fermentation finishes, trapping CO2 naturally and leaving yeast sediment in the bottle. The result is a hazy, straw-yellow sparkling wine with a gentle mousse. Stand the bottle upright overnight before opening or gently invert to integrate the lees depending on your preference.

The wine is labeled Vigneti delle Dolomiti IGT, reflecting that Solaris falls outside the permitted varieties of the traditional Trentino DOC appellation system.

The wine's bright acidity and mineral edge make it a natural match for cured meats and fresh charcuterie, particularly speck or bresaola. It also works well alongside light seafood dishes, fried zucchini blossoms, or a simple plate of aged alpine cheese. Fatty, salty foods balance the wine's grapefruit-driven citrus finish.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Pojer e Sandri

Pojer e Sandri was established in 1975 in the alpine village of Faedo, on the steep eastern side of the canyon-like Adige valley in the Trento province. Fiorentino Sandri inherited a parcel of family vineyards there, and partnered with Mario Pojer, who had just completed his enology diploma at the Istituto Agrario di San Michele all'Adige. Their first release was a 1975 Palai Müller-Thurgau. From the outset their focus was on reviving indigenous Trentino grape varieties and demonstrating that this then-untested viticultural zone between the Adige river and the Cembra Valley could produce serious wine.

The estate now farms approximately 26 hectares of organically certified vines spread across three distinct areas: Faedo, Cembra, and Grumes. Faedo, the home site, sits between roughly 180 and 610 meters elevation on limestone and glacial moraine soils and is the heart of the estate. The Val di Cembra sites, including Grumes at around 900 meters, are planted on steep volcanic porphyry slopes with cool air from the Marmolada and afternoon warmth from Lake Garda. No herbicides, desiccants, or chemical anti-botritic treatments are used across any of the holdings.

In the cellar, Pojer e Sandri pioneered non-oxidative pressing using inert CO2 in Trentino, a technique that preserves freshness in white wines. The estate produces over 300,000 bottles annually across 60 different products including still wines, sparkling wines, grappa, brandy, and traditional wine vinegars. The Zero Infinito sits at the far end of their zero-intervention philosophy: no added yeasts, no sulfur at any stage, no fining, and no filtration, with fermentation completed in bottle using the ancestral method.

Trentino-Alto Adige, Italy

Trentino-Alto Adige is Italy's northernmost wine region, running along the Adige River valley from the border with Austria south toward Verona. The region sits at the 46th parallel north, sharing latitude with central Burgundy, yet the valley floors heat up quickly in summer as warm air rises from below, producing riper fruit than the alpine setting might suggest. The Dolomites act as a rain shadow to the east, while warm air currents from Lake Garda moderate the southern end of the valley. Vineyards range from roughly 200 meters on the valley floor to 900 meters or higher in side valleys like Val di Cembra, where pronounced diurnal temperature swings preserve acidity and aromatic intensity.

The region produces over 70% white wine and holds the highest proportion of DOC-classified wine of any Italian region. Key appellations include Trentino DOC, which covers a broad range of varietal wines; Trento DOC (trademarked as Trentodoc), reserved for metodo classico sparkling wines; Teroldego Rotaliano DOC for the native red Teroldego on the Campo Rotaliano plain; and the catch-all Vigneti delle Dolomiti IGT, which accommodates varieties and styles that fall outside the stricter DOC rules. Soil types vary considerably: limestone and glacial moraine on the eastern slopes near Faedo, and volcanic porphyry in the Val di Cembra, the latter giving wines a distinct mineral and stony character.
