Dark Matter Coffee

Dark Matter has been roasting in Chicago since 2007. The values they publish are people, big ideas, adaptability, positive disruption and stellar coffee, in that order, which tells you something about the house style.

Their producing relationships in El Salvador and Guatemala run more than a decade deep, close enough that they have followed individual lots from seed to maturity. Their line on it is that knowledge inspires care and context is everything.

Most of what we carry is shelf stable until it is opened, and would rather sit in a cool dark cupboard than on a sunny counter. Anything that needs refrigerating once opened says so on the label.
