Pinot Noir

Pinot Noir is one of the world's most expressive and most demanding grape varieties. Thin-skinned and sensitive to terroir, it produces wines that range from palely translucent and hauntingly perfumed in cool climates to richly structured and age-worthy in warmer ones. Our natural Pinot Noir collection covers the full spectrum: village Burgundy, Oregon's Willamette Valley, coastal California, and lesser-known expressions from Alsace, Baden, and Lombardy.

Read more about natural Pinot Noir

No grape rewards good farming like Pinot Noir. Its thin skin and early ripening make it fragile in the vineyard, but that same sensitivity is what lets it transmit a site so faithfully. Grown well and handled gently, Pinot turns soil, slope, and climate into perfume and texture, which is exactly why it sits at the heart of natural winemaking. Many in this collection come from organically or biodynamically farmed fruit and native-yeast fermentation, with minimal handling in the cellar.

The range spans the classics and the outliers. Burgundy is the birthplace, where limestone soils give Pinot its benchmark of red fruit, earth, and silk. Oregon's Willamette Valley offers a cooler, brighter New World take, while coastal California brings a touch more flesh and dark fruit. From Alsace and Germany's Baden come lighter, higher-toned versions, and northern Italy contributes its own delicate expressions. Whole-cluster fermentation, common among natural growers, adds a floral, spicy lift you will notice across many of these wines.

Pinot Noir is famously versatile at the table. It pairs with everything from roast chicken and salmon to mushrooms, duck, and soft cheeses. Serve it slightly cool, around 55 to 60 degrees, to keep its aromatics fresh. Lighter, chillable examples are a great entry point; the village and single-site wines reward cellaring. Pinot Noir is thin-skinned and highly sensitive to where it grows, so it transmits soil, slope, and climate more clearly than almost any other grape. That transparency is exactly what natural winemaking aims to preserve, which is why organic and biodynamic farming and native-yeast fermentation suit it so well.

Pinot is typically pale and perfumed, with red fruit like cherry and raspberry, floral and earthy notes, silky tannin, and fresh acidity. Cool-climate versions are lighter and more aromatic; warmer sites give darker fruit and more body. It is rarely heavy or overly tannic.

The range spans Burgundy, its limestone-driven homeland, plus Oregon's Willamette Valley, coastal California, Alsace and Baden in the north, and pockets of northern Italy. Together they show how differently the same grape can taste from place to place.

It means fermenting the grapes with their stems still attached, rather than removing them first. Common among natural Pinot growers, it can add a floral lift, gentle spice, and extra freshness and structure. You will notice that aromatic character in many of the wines here.

Pinot is one of the most versatile reds at the table. It pairs with roast chicken, duck, salmon, mushrooms, and soft cheeses, and its acidity makes it friendly with a wide range of dishes. Serve it slightly cool, around 55 to 60 degrees, to keep the aromatics fresh.

It depends on the wine. Lighter, chillable bottlings are best enjoyed young and fresh, while village-level and single-site wines, especially from Burgundy, can develop beautifully over years. Product notes will indicate which bottles reward patience.
