Keynote is honey processed, which is the fussy middle path between washed and natural: the fruit skin comes off, the sticky layer underneath stays on to dry, and the sugar in it goes into the seed.

Chromatic put it plainly on the bag, which says the coffee tastes like caramel and fudge. Honey processing is usually why a coffee tastes like that.

The Brand

Chromatic Coffee

Chromatic was founded in 2012 in San Jose by Hiver van Geenhoven, Wendy Warren and James Warren. Van Geenhoven roasts and buys green, with long ties to growing communities in El Salvador and Kenya.

They describe the roasting as deliberate and detail-oriented, batch by batch, aimed at pulling out what is already in the bean rather than imposing a house profile on it. Metro readers have repeatedly voted them Silicon Valley's best roaster.

Pantry items are fulfilled by our partner retailer in California, so they ship on their own and will not arrive in the same box as your wine. Order both and you should expect two parcels, often on different days.

Wine requires an adult signature on delivery. Pantry items do not, so they can be left at your door like any ordinary parcel.

Most of what we carry is shelf stable until it is opened, and would rather sit in a cool dark cupboard than on a sunny counter. Anything that needs refrigerating once opened says so on the label.
