The Wine: Waldbaden Cab Franc 2020
Fernweh Waldbaden Cab Franc is a red natural wine made from 100% Cabernet Franc grapes farmed sustainably in California. The grapes were hand-harvested on Sept 21, 2020, native fermentation in open-top fermenters with 25% whole cluster, pressed after 15 days. The wine is aged for 7 months in neutral barrels. Only 35 cases made.
Winemaker's notes: Fire-grilled poblano pepper, juicy black cherry, and notes of smoking campfire. This wine reminds me of climbing into an old leather chair after kicking off my boots covered in dried crunchy leaves from a long day hiking. Finishes beautifully with black currant, bitter cocoa, and toasted tobacco. I love this wine chilled or room temp depending on the weather and season so it's perfect to bring on your next adventure. Pairs well with BBQ or bay leaf stewed lentils.
