Elios Glou Glou Rosso is 100% Nerello Mascalese grown on young vines in the Monreale area of northwest Sicily, southwest of Palermo. Winemakers Nicola Adamo and Guido Grillo deliberately planted this grape outside its traditional Etna home to explore a different expression: lower elevation, clay-sandy soils, and a warmer coastal influence that yields a softer, more immediately drinkable fruit character than the volcanic north-face Etna versions.

Grapes are hand-harvested from biodynamic vineyards and macerated on the skins for one to two days before spontaneous fermentation in stainless steel. The wine ages in stainless steel for seven months, then is bottled unfined and unfiltered with only a minimal addition of sulfur. No selected yeasts, no additives. The result sits at 11% ABV with negligible tannins and lively acidity.

The name is French slang for gulping: a glou-glou wine is one designed to be drunk freely, lightly chilled, without ceremony. This bottles that intent precisely. Nerello Mascalese here shows bright red cherry, wild strawberry, raspberry, and a faint savory-mineral edge rather than the structured, age-worthy profile it achieves on Etna's volcanic soils. Drink young, serve cold.

Works well with grilled fish, especially sea bream or swordfish, where its acidity and low tannin do not overpower the protein. Also solid alongside a charcuterie board, pizza, or dishes with nightshade vegetables. Serve slightly chilled at around 55F.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Elios

Elios was founded in 2015 by Nicola Adamo, a computer engineer, and Guido Grillo, a winemaker who previously worked in industrial wine production. Both grew up in western Sicily and decided to take over their families' agricultural holdings in Alcamo, in the Province of Trapani, rather than continue selling grapes in bulk to large wineries. Their farm spans vineyards in Alcamo, Camporeale, and Monreale, all in the northwest of the island.

All Elios vineyards are farmed organically and biodynamically. The estate grows native Sicilian varieties including Grillo, Catarratto, Zibibbo, Nero d'Avola, and Nerello Mascalese. Beyond wine, the farm also produces extra virgin olive oil and honey. The Nerello Mascalese for Glou Glou was planted in Monreale in 2016, specifically to explore how the grape behaves in clay soils at lower elevations compared to its traditional Etna environment.

Guido Grillo oversees winemaking under a strict minimum-intervention philosophy: spontaneous fermentation with indigenous yeasts, no fining or filtration, no additives, and only minimal sulfur at bottling. The Modus Bibendi label covers their core range of varietal wines; Glou Glou sits outside that line as a deliberate exercise in light, chillable, low-ABV winemaking. All fermentation and aging for Glou Glou occurs in stainless steel.

Sicily, Italy

Sicily is Italy's largest island and one of its most diverse wine-producing regions. The island's Mediterranean climate brings hot, dry summers and mild winters, with most rainfall concentrated between October and December. Coastal breezes help moderate temperatures in vineyard areas near the sea, preserving acidity in the grapes. Western Sicily, where Elios operates, features hilly terrain with volcanic influences, limestone, and clay-based soils rather than the mineral-rich basalt of Etna on the eastern side.

The Monreale DOC sits in the hills southwest of Palermo, with vineyards ranging from 300 to 600 meters in elevation on predominantly clay-sandy soils. The broader appellation covering this wine is Terre Siciliane IGT, the region-wide designation created in 2011 when the former Sicilia IGT was promoted to DOC status. Northwest Sicily also contains the DOCs of Alcamo, Marsala, and Contessa Entellina. While Nerello Mascalese is historically associated with Etna DOC and Faro DOC on the island's north and east, Elios deliberately planted it in Monreale to test a lower-elevation, non-volcanic expression of the variety.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
