Tasting notes

A single barrel of biodynamically grown Savatiano aged five years in old 225-liter French oak, this is one of the most serious and age-worthy orange wines produced in Greece. The roasted nut, honey, and dried fruit complexity it develops is genuinely rare for an indigenous Greek white grape, and the fully dry palate keeps it honest.

Georgas Old Barrel is a single-barrel orange wine made from 100% Savatiano grown biodynamically on the Georgas family estate in Spata, within the Mesogaia zone of Attica. The 4.5-hectare estate, farmed at yields of just 21 hectoliters per hectare, produces dry-farmed fruit without irrigation in one of the hottest and most arid growing areas in Greece. The wine carries the PGI Attiki designation.

Fermentation is spontaneous in stainless steel with 6 days of skin contact, followed by 5 years of aging in a single old 225-liter French oak barrel. No sulfites are added at any stage. The extended barrel time on a wine that started with only 6 days of skin contact creates an unusually oxidative and concentrated profile for an orange wine, with the copper color deepening well beyond what the maceration alone would produce.

The nose is complex and mature: roasted nuts, honey, and dried fruits dominate, with an oxidative character that recalls fino sherry or aged white Burgundy more than it does a young skin-contact wine. The palate is fully dry, structured by tannin from the skin contact and texture from the long oak aging, with a long, nutty finish. This is a wine built for the table, not for casual sipping.

Dimitris Georgas converted to organic farming in 1998 and adopted biodynamic practices shortly after, guided by a background in geology and environmental management. The estate is certified organic under DIO GR-01-BIO. The Georgas family has cultivated vines in Spata for over 380 years, with the current winery operating from the restored historical Kambas winery.

The wine's nutty, oxidative profile and dry tannic structure make it a strong match for aged hard cheeses like graviera or aged manchego. It holds up well alongside roasted chicken with walnut sauce, spiced lentils, or dishes with tahini. Avoid very delicate seafood or light salads — this wine needs food with some fat or umami to balance its texture.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.

Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.

Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.

Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.

Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Georgas

The Georgas family has cultivated vines in Spata for over 380 years, making them one of the most historically rooted producers in Attica. The current estate operates from the restored historical Kambas winery, and the street where the family's original winery once stood bears their name. Dimitris Georgas, the fourth generation currently managing the estate, holds degrees in geology, oceanography, and environmental management. He inherited the vineyards upon his father's death and converted the estate to certified organic farming in 1998, followed by biodynamic practices.

The estate covers 4.5 hectares of dry-farmed vineyards, all estate-owned, farmed biodynamically with no irrigation. Yields are kept extremely low at 21 hectoliters per hectare. The estate holds organic certification under DIO GR-01-BIO. Primary grape varieties include Savatiano and Malagouzia, with smaller plantings of Assyrtiko, Mandilari, Merlot, and Syrah.

All wines are produced through spontaneous fermentation with no added sulfites (for most wines in the range) and no filtering. Skin contact of up to one week gives the Savatiano-based wines their characteristic bronze color. The Old Barrel is a distinct, single-barrel project: after 6 days of skin contact in stainless steel, the wine ages for 5 full years in a single old 225-liter French oak barrel before release.

Wine region

Attica, Greece

Attica (Attiki) is located at the southeastern tip of central Greece and is home to the country's most widely planted grape, Savatiano. The Mesogaia sub-zone, which includes the town of Spata roughly 20 kilometers east of Athens, is among the warmest and driest wine-growing areas in all of Greece. Summers are hot with minimal rainfall during the growing season, though cool breezes from the Euboean Gulf moderate temperatures and reduce disease pressure significantly. This climate makes organic and biodynamic farming highly viable.

The predominant soils in Mesogaia are limestone-based, forcing unirrigated vines to root deeply in search of water and nutrients. Many vines in the area are old bush-trained (gobelet) plantings from the post-phylloxera era, some dating to the late 1950s. Wines produced under the PGI Attiki designation can range from fresh whites to extended-maceration orange wines, dessert wines, and the Traditional Appellation wine Retsina. Savatiano's natural drought resistance and thick skin make it well-suited to long skin-contact and extended aging experiments.
