The Wine: Silvaner Trocken 2017
Kraemer Silvaner Trocken 2017 is a white natural wine made from 100% certified organic Silvaner grapes grown in the Auernhofen sub-area, Franconia region, Germany. The vines are planted on limestone and flint soils, the wine is fermented in steel with native yeast, no skin contact or whole cluster, bottled unfined and unfiltered.
The Producer: Kraemer
Stephan Kraemer and his wife Simone Kraemer are farmers to the bone. Together they work 75 hectares of organic crops, 3 hectares of which are grapevines. Their encyclopedic knowledge of soil rejuvenation and crop rotation translates to a primal understanding of their grapevines. To Stephan and Simone, terroir is not a romantic term — it's the scientific process by which mycorrhizal in their soil nurture the grapes which grow there. They discovered its romantic side in 2013 when the "alcoholic beverages" they'd been producing “became wine” which reflected their razor-sharp view of terroir. Now, with microscopic additions of sulfur and a healthy natural reduction in their grapes, their wines are some of the most ethereal we've ever tasted. (source: Super Glou)
