Tasting notes

País from 250-year-old vines on volcanic trumao soil delivers something you rarely get from a liter-format everyday red: genuine terroir character, with smoky minerality, bright cranberry and cherry fruit, and a crisp acidity that makes it impossible to stop pouring. The raulí oak aging adds a subtle woody note without any detectable vanilla or toast.

Pipeño is a centuries-old Chilean wine style — the word refers to wine drawn directly from the pipa (barrel) and drunk by farmers in the fields. Cacique Maravilla's version is 100% País, the Listán Prieto grape brought to Chile from the Canary Islands during the Spanish conquest and now considered Chile's most historically significant variety. The vines at Yumbel were first planted around 1766 on trumao soil — volcanic sand formed by redeposited ash over a lava river — and some are over 250 years old, making them pre-phylloxera survivors.

In the cellar, grapes are hand-harvested and destemmed using a zaranda, a traditional bamboo screen. Fermentation is spontaneous in open-top lagars of raulí, a native Chilean pink oak. No pressing: only free-run juice is used. The wine is moved by gravity into raulí pipas for aging on fine lees, then bottled unfiltered and unfined with no added sulfur.

The result is light-bodied and high-acid with fresh red fruit, a flinty smokiness from the volcanic soil, and a slight earthy, herbal edge. It is best served slightly chilled and is packaged in a one-liter bottle — the traditional format for a wine that was never meant to be rationed.

The high acidity and low tannin make this a natural match for grilled chorizo, roast chicken with herbs, or a simple charcuterie board. It also holds up well alongside earthy dishes like lentil stew or mushroom empanadas. Serve at around 55F — pull it from the fridge 10 minutes before pouring.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.

Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.

Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.

Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.

Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Cacique Maravilla

Manuel Moraga Gutierrez is the seventh-generation owner and winemaker of Cacique Maravilla, based in the village of Yumbel in the Bio Bio Valley. The family's connection to this land dates to 1750, when his ancestor Francisco Gutierrez Gutierrez arrived from the Canary Islands and eventually acquired land in Yumbel. Francisco earned the respect of the local Mapuche people and was given the name Cacique Maravilla — roughly, 'Magnificent Chief.' The vineyard was the 33rd registered in Chile's history, a fact commemorated on every cork. Manuel took over the winery in 2010 following his father's retirement, and a major earthquake that same year — which destroyed equipment and claimed family members — prompted him to abandon modern interventions entirely and return to his grandfather's methods.

The farm covers 80 hectares near Yumbel, with 16 hectares under vine planted on trumao soil over a lava river. The oldest País vines date to around 1766 and have survived phylloxera due to their volcanic, sandy soil environment. Manuel dry-farms all vines with no chemical inputs, minimal pruning, and no irrigation. Horses are used to work the soil. Other varieties on the estate include Moscatel de Alejandría, Cabernet Sauvignon, Malbec, Torrontel, and Corinto.

All cellar work is manual. Grapes are destemmed using a zaranda, a traditional bamboo screen, rather than a mechanical destemmer. Fermentation is spontaneous using native yeasts in open-top lagars made from raulí, a native Chilean pink oak. No pressing is used — only free-run juice — which is moved by gravity into raulí pipas for aging on fine lees. The wines are bottled unfined, unfiltered, and without any added sulfur or other oenological additives. Pomace from the pressing is used to make grappa.

Wine region

Bio Bio Valley, Chile

The Bio Bio Valley sits at approximately 36–38 degrees south latitude, roughly 435 kilometers south of Santiago — making it one of Chile's southernmost and coolest wine regions. The Pacific Ocean moderates summer temperatures, and the region experiences significantly more rainfall and diurnal temperature variation than the Maipo or Colchagua valleys to the north. The Yumbel subzone, located about 59 kilometers from the coast, has a cool maritime influence and volcanic soils classified as trumao — ash-derived sandy soils with high drainage and low fertility that stress vines and concentrate flavor.

The Secano Interior de Yumbel is a designated D.O. (Denominación de Origen) within the Bio Bio Valley, characterized by its interior dryland (secano) farming conditions and those distinctive trumao volcanic soils. País and Moscatel de Alejandría are the historically planted varieties in this zone, both introduced during the colonial period. While much of the broader Bio Bio Valley has shifted toward Pinot Noir, Riesling, and Gewürztraminer for export markets, the Yumbel interior remains a stronghold of traditional farming and ancestral grape varieties.
