This is a Gamay pet nat with a clear sense of place: the clay-limestone soils of the Pierres Dorées push bright cranberry and cherry notes, and the méthode ancestrale keeps the bubbles soft and the palate fresh rather than sweet. The frosted bottle is a bonus — it looks as good chilled in an ice bucket as it tastes.

Jean-François Debourg's Pet Mat Gamay is a pétillant naturel made from 100% Gamay Noir grown on organically farmed plots in the Pierres Dorées subzone of southern Beaujolais, centered around the village of Saint-Germain-Nuelles. The estate's soils are notably varied — clay-limestone, silt, granite, alluvium, and pink sands — which distinguishes it from the granite-dominant north. The wine is labeled Vin de France, giving Debourg latitude outside the AOC framework to vinify without additions.

The wine is made by the méthode ancestrale: fermentation begins with native yeasts, and the wine is bottled before that single fermentation completes. The trapped CO2 creates gentle, low-pressure bubbles (typically around 2–3 bars), resulting in soft effervescence rather than the aggressive fizz of Champagne-method sparkling wines. No sulfur is added. The bottle is frosted, making it immediately recognizable on a shelf.

Debourg began making wine under his own label only in 2016, guided early on by mentor François Ecot. Before that, the family estate — which dates to 1850 — sold its grapes to the local cooperative and neighboring producers. Organic certification (Ecocert) was completed in 2021, though farming without synthetic inputs began earlier. Wines have been made without any added inputs since 2018.

Gamay grown on the clay-limestone soils of southern Beaujolais tends toward bright red fruit — cherry, cranberry, raspberry — with lighter structure and higher acidity than Gamay from the granite-heavy crus to the north. In pet nat form, those characteristics are amplified: the effervescence lifts the fruit, and the wine stays juicy, low in tannin, and highly drinkable.

Serve well chilled with charcuterie, fresh goat cheese, or a simple tomato salad. The acidity and effervescence cut through fattier foods well — try it alongside a pork terrine or fried chicken. It also works as a standalone aperitif.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Jean-François Debourg

Jean-François Debourg is based in Saint-Germain-Nuelles in southern Beaujolais. The family estate dates to 1850 and was passed from father to son across generations. Until 2016, Debourg operated as a grape grower, selling fruit to the local cooperative and neighboring winemakers. In 2016, he began making wine under his own label, guided early on by natural winemaker François Ecot.

The estate encompasses roughly 20 hectares of vines across plots with markedly different soils: clay-limestone, silt, granite, alluvium, and pink sands. Debourg farms organically, receiving Ecocert organic certification in 2021. The vineyard grows Gamay, Viognier, and Chardonnay. Winemaking has been additive-free — no sulfur, no fining agents — since 2018.

Depending on the cuvée, Debourg vinifies with whole clusters or destemmed grapes, and ages wines in either stainless steel or large oak foudres for around eight months. Pet Mat Gamay is made by the méthode ancestrale: bottled during its single fermentation so that CO2 is trapped naturally, producing gentle effervescence without any added sugar, yeast, or sulfur. Wines are bottled unfined and unfiltered.

Beaujolais, France

Beaujolais sits at the southern end of Burgundy, running from Lyon north toward Mâcon. The region divides broadly into two zones separated by the Nizerand River: the northern section, home to the ten crus (Morgon, Moulin-à-Vent, Fleurie, and others), sits on decomposed granite and schist; the southern section, including Les Pierres Dorées, is dominated by clay-limestone, marl, and sandstone soils dating to the Mesozoic era. Debourg farms in this southern zone near Saint-Germain-Nuelles, where golden limestone outcroppings give the Pierres Dorées subzone its name — 'golden stones.'

The AOC Beaujolais appellation covers roughly 24 square miles across 72 villages, with Gamay Noir à Jus Blanc as the required red grape. Wines from the southern Pierres Dorées area tend to be lighter and more fruit-forward than cru Beaujolais, with vibrant red fruit character and higher natural acidity. The appellation also permits Chardonnay for white wines. Beaujolais was designated a UNESCO Geopark in recognition of its exceptional geological diversity, which spans granite, volcanic rock, limestone, clay, and alluvial deposits across a relatively compact growing area.

Signature on delivery is mandatory for wine deliveries. Please make sure someone is at the shipping address to sign for the package.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
