The Producer: Bodegas Cueva
In the village of La Portera, located in the Utiel-Requena region of Valencia, Bodega Cueva dates back to the 18th century, and has never known anything but natural winemaking and farming practices. The winemaker and owner Mariano Taberner harvests the oldest vines possible, reds reaching 60 years, and whites 30 years. Bodega Cueva is certified organic, and the wines are always native yeast fermented, unfined, unfiltered, and without added free sulfur. The only cellar intervention is that Mariano plays music to his wine.
