Tasting notes

Moscato Bianco rarely gets this treatment: a full week on skins followed by nearly a year in chestnut barrels, which shifts the grape from fragrant and simple to mineral, textured, and genuinely complex. The jasmine and stone-fruit aromatics are still there, but they sit alongside a nutty, savoury depth that you don't expect from the variety.

  • Style: Dry, medium-bodied orange wine; deep golden-amber; jasmine, stone fruit, mineral; approx. 12% ABV
  • Grapes & Terroir: 100% Moscato Bianco; 40+ year old vines; clay-silt-limestone soils; southeast-facing; Amaseno River Valley, Province of Latina, Lazio
  • Winemaking: 7 days skin contact; fermented in stainless steel; 11 months aging in chestnut barrels; no added sulfites; unfined and unfiltered
  • Serving: Serve at 52-56F; can open immediately or allow 15-20 min in glass
  • Pairing: Grilled fish and shellfish, aged pecorino, roasted artichokes, bitter greens, mild washed-rind cheese
  • Similar To: For fans of skin-contact whites and orange wines who want something more structured and savory than typical Moscato

Moli is made from 100% old-vine Moscato Bianco grown in the Amaseno River Valley near Priverno, in the Province of Latina, southern Lazio. The vines are over 40 years old and grow on clay-silt soils with a slight presence of sand and limestone, with a southeast exposure. No chemicals are used in the vineyard.

After hand-harvesting in small crates, the destemmed grapes undergo approximately 7 days of skin contact, followed by fermentation in stainless steel. The wine then ages for 11 months in chestnut barrels, which add subtle woody complexity to the aromatic Moscato base. No sulfites are added; the wine is unfined and unfiltered.

In the glass, Moli shows a deep golden-amber color. The nose leads with jasmine and yellow stone fruit at moderate ripeness, with a mineral quality that carries through to the palate. The chestnut aging adds a gentle tannic grip and woody depth that tempers Moscato's natural floral exuberance. The palate is mineral, persistent, and fuller-bodied than most skin-contact wines from this grape.

Moli is a vino da tavola with no appellation designation, typical of Sete's approach of working outside DOC constraints to vinify each individual vineyard plot on its own terms.

Good with grilled fish and shellfish, where the wine's minerality and stone-fruit notes complement briny, lightly charred flavors. Try it alongside aged pecorino or a mild washed-rind cheese, where the chestnut-derived tannins find traction. It also works with simply prepared vegetable dishes — roasted artichokes, bitter greens with olive oil — common to the Priverno area.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.

Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.

Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.

Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.

Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Sete

Sete Vini Naturali was founded in 2013 by childhood friends Emiliano Giorgi and Arcangelo Galuppi in Priverno, a small town in the Province of Latina, roughly 100 kilometers south of Rome in the Amaseno River Valley. The name Sete means 'thirst' in Italian. Emiliano had previously worked two vintages, in 2010 and 2011, at Le Coste di Gradoli, the pioneering natural wine estate in northern Lazio run by Gianmarco Antonuzi, before returning to his home territory with Arcangelo to start the project.

The project's core mission is to recover old and abandoned vineyards in the municipalities of Priverno, Roccagorga, Maenza, and Roccasecca dei Volsci. Sete began by purchasing grapes from or renting vineyards owned by elderly local farmers, and now farms approximately 3 hectares divided across 11 separate parcels. The grapes they work include indigenous and largely forgotten varieties: Ottonese, Cesanese, Moscato Bianco, Nero Buono, Bonamico, and Malvasia Puntinata. Farming is organic, with no pesticides or chemicals, and each vineyard plot is vinified separately.

All work in the vineyards and cellar is done by hand, with no oenologists involved. Fermentation is spontaneous using indigenous yeasts. Wines are never fined or filtered, and no sulfites are added. Sete holds organic certification from Suolo e Salute. Winemaking vessel choices vary by wine: some age in fiberglass, others in chestnut barrels, reflecting the project's interest in exploring different expressions from each individual vineyard plot.

Wine region

Lazio, Italy

Lazio is a large central Italian region whose capital is Rome, situated between Tuscany to the north and Campania to the south, with a long Tyrrhenian coastline to the west and the Apennines to the east. The climate is Mediterranean: hot, dry summers and mild, wet winters, moderated by sea breezes from the Tyrrhenian coast. The landscape ranges from volcanic hills and crater lakes in the north and center to coastal plains and fertile alluvial valleys in the south, where Sete operates in the Amaseno River Valley near Priverno in the Province of Latina. Soils vary widely: the Alban Hills and Castelli Romani area south of Rome feature mineral-rich volcanic tuff and basalt, while the Latina plain and valley floors include clay, silt, sand, and limestone.

Lazio has over 30 DOC zones and three DOCGs: Cesanese del Piglio (the only red DOCG, established 2008), Frascati Superiore, and Cannellino di Frascati. The region is historically dominated by white wines made from Trebbiano and Malvasia, with Frascati DOC being the most recognized appellation internationally. The indigenous red grape Cesanese, grown mainly around Piglio in the Ciociaria area, produces the region's most structured reds. Other native varieties of note include Bellone, Greco, Moscato di Terracina, Ottonese, and Bonamico — many of which are rescued and vinified by a new generation of natural producers working outside the appellation system in southern Lazio.
