This is Trollinger at its most honest: pale ruby, nearly translucent, with a nose of wild strawberry, crushed raspberry, and an iris-like floral lift backed by chalky mineral snap. The acidity is the real hook — bright and persistent without being sharp — making this one of the easiest, most crave-able light reds for warm weather or the dinner table.

La Boutanche Trollinger is 100% Trollinger sourced from 8 different vineyard plots in the villages of Strümpfelbach and Schnait in the Remstal sub-zone of Württemberg, Germany. Vines range from 12 to 36 years old and are farmed organically. Grapes are hand-harvested and fermented with wild yeast in stainless steel tanks, where the wine also ages. Residual sugar sits at just 1.9 g/l with acidity at 5.3 g/l, making this fully dry and tightly structured for the variety.

Trollinger — known as Schiava or Vernatsch in Italy, where it likely originated in South Tyrol — is the defining red grape of Württemberg and rarely exported. The Schiava Grossa clone dominates German plantings. In the glass, it pours a translucent pale ruby to fuchsia, a color that sits somewhere between a light red and a dark rosé. The grape's naturally high acidity (7–10 g/l is typical for the variety) is on full display here, giving the wine a zingy, refreshing character that rewards a light chill.

The La Boutanche label is a 1-liter format project conceived by importer Selection Massale to deliver honest, natural wine at an accessible price point. Andi Knauss produces the Trollinger and Riesling expressions under this label. The wine carries no added sulfur, no fining, and no filtration. It is bottled under screw cap in a liter format designed for easy, informal drinking.

Serve lightly chilled (55–58°F) alongside charcuterie, salumi, or a simple board of aged cheeses. The wine's bright acidity and low tannin make it an easy match for tomato-based pasta, grilled chicken, or lighter sausages. It also holds its own as a standalone aperitif — pour it cold on a warm evening and it does the work.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Andi Knauss

Weingut Knauss is based in Strümpfelbach, a village in the Remstal-Stuttgart area of Württemberg. The estate operates in its second generation: earlier family members delivered grapes to the local cooperative until 1995, when the Knauss family began producing and bottling under their own label. Andi Knauss took over winemaking in 2004 after completing wine school and an apprenticeship in Austria, where he learned organic viticulture. Under his direction the estate grew to approximately 14–18 hectares farmed across more than 100 plots in Strümpfelbach and surrounding villages including Schnait, Beutelsbach, and Endersbach. Andreas Knauss passed away in autumn 2023; the estate continues under a team led by Manu Knauss.

Viticulture at Weingut Knauss is certified organic. The estate plants at high density — approximately 6,000 vines per hectare — to encourage deep root development and concentration. No chemical herbicides or pesticides are used. The vineyards sit on a mosaic of Keuper-derived soils at 300–400 meters elevation, which shift in character with altitude. Red varieties including Trollinger, Lemberger, Spätburgunder, and Merlot occupy roughly two-thirds of the planted area.

In the cellar, native yeast fermentations are standard across the range, and minimal sulfur additions are the norm; some cuvées, including certain Trollinger expressions, are made with no sulfur at all. The La Boutanche Trollinger is fermented and aged entirely in stainless steel tanks, bottled without fining or filtration, and sealed with a screw cap in a one-liter format. The wine is made to be consumed young and does not require decanting.

Württemberg, Germany

Württemberg is Germany's largest red wine region by plantings, with roughly 65% of its approximately 11,400 hectares devoted to red varieties. The region runs along the Neckar River and its tributaries — including the Rems, Enz, Kocher, and Jagst — through the state of Baden-Württemberg. The Remstal sub-zone, east of Stuttgart, is home to Weingut Knauss. Vineyard elevations in the Remstal range between 300 and 400 meters above sea level, and the sheltered river valleys create mild microclimates with long, warm summers and around 1,600 sunshine hours annually.

Trollinger accounts for roughly 19–21% of all Württemberg plantings — approximately 2,500 hectares — making it the region's signature variety, sometimes called the Swabian national drink. The grape is the Schiava Grossa clone, the same variety known as Schiava in northern Italy. Soils across Württemberg are unusually diverse: shell limestone (Muschelkalk), Keuper (a layered sandstone and clay formation), marl, loess, and Schilfsandstein (reed sandstone) all appear depending on elevation and position along the valley slopes. The Knauss estate specifically sits on Gipskeuper, Mergel (marl), Schilfsandstein, Kieselsandstein, and Stubensandstein soils.
