The three-vessel fermentation approach, combining cement, stainless, and a custom cigar-shaped oak barrel, adds textural complexity you don't usually find in a pet-nat at this price. The Sauvignon Blanc brings the citrus snap while the Chardonnay rounds it out with a faint bread-dough quality. It's dry, persistent, and light on its feet.

La Boutanche is a pétillant naturel blanc from Quentin Bourse of Le Sot de l'Ange, made from a blend of Sauvignon Blanc and Chardonnay grown on biodynamically farmed vines in Azay-le-Rideau, in the Touraine subzone of the Loire Valley. The estate sits on clay-silica soils (locally called perruches) and clay-limestone aubuis over a Tuffeau limestone bedrock, which lends the wines their characteristic mineral edge.

Bourse ferments and ages the blend across three different vessels: a cement tank, a stainless steel tank, and a custom oak barrel he had built to his own specifications, referred to in the cellar as the cigar barrel. The wine completes its secondary fermentation in bottle, as pétillant naturel, with no disgorgement and no added SO2.

The result is a lively, low-pressure sparkler with fine persistent bubbles, aromas of green apple, fresh-baked bread, and citrus zest, and a lean, dry finish driven by the natural acidity of both varieties. It is bottled as Vin de France.

Works well with oysters, fresh goat cheese from the Loire (Valençay or Selles-sur-Cher), or a simple plate of charcuterie. The acidity and light effervescence also make it a practical match for fried foods or dishes with a squeeze of lemon.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

La Boutanche

Quentin Bourse took over a friend's estate in Azay-le-Rideau in time for the 2013 harvest, naming the label Le Sot de l'Ange, a rough translation of which is 'the idiot angel.' Before starting the domaine, he completed internships with both natural and conventional producers in the Loire, including a six-month stage at Domaine Huet in Vouvray. He works approximately 12 hectares of vines and continues to add parcels.

The estate holds biodynamic certification, which is uncommon in the Azay-le-Rideau area. Bourse works the vines by hand, limits copper sulfate applications to around 500 grams per year (roughly 75 percent less than the regional norm), and farms with clay-silica and clay-limestone soils over Tuffeau limestone. Silex stones are visible across many of the parcels.

In the cellar, grapes are sorted four times before fermentation with indigenous yeasts. Pressing is slow and can run five or more hours. Aging vessel varies by cuvée, among tank, neutral barrique, and amphora. No SO2 is added for red wines; a minimal amount is used for whites. The La Boutanche pet-nat is fermented across cement tank, stainless steel, and a custom oak cigar barrel, then bottled before fermentation finishes to complete its secondary fermentation in bottle.

Loire Valley, France

The Loire Valley stretches roughly 1,000 kilometers across north-central France, running from the Massif Central to the Atlantic coast. Touraine sits in the middle section, centered on the city of Tours in Indre-et-Loire, where the Loire is joined by tributaries including the Indre and the Cher. The climate is primarily oceanic in the west and becomes slightly more continental moving east, with annual rainfall around 550 millimeters and warm summers averaging 20 degrees Celsius from July through September.

Azay-le-Rideau is a small subzone of Touraine located along the Indre River valley, with vineyards positioned at 40 to 80 meters elevation on a Tuffeau limestone bedrock formed approximately 90 million years ago. Three main soil types overlay this bedrock: perruches (flinty clay-silica conglomerates), aubuis (warm, permeable clay-limestone), and aeolian sands. The AOC Touraine-Azay-le-Rideau covers approximately 50 hectares across eight communes and is formally limited to Chenin Blanc whites and Grolleau-based rosés. Wines made outside those varietal rules, including blended pet-nats, are classified as Vin de France.
