This is Catarratto treated as a serious grape: seven days on the skins pull out texture and a faint savory grip that makes it feel more like a red at the table than a white. The candied apricot and orange zest on the nose give way to a salty, herb-tinged finish that keeps you reaching for the next sip.

Katamacerato is a 100% Catarratto orange wine from Elios, made under the Modus Bibendi label. The grapes come from organically farmed vineyards in Monreale, in western Sicily's Palermo hinterland, at around 200 meters elevation on clayey black earth soils. Vines average roughly 14 years old at the time of this vintage. The wine is labeled Terre Siciliane IGT.

Harvest is done by hand in the second week of September. Fermentation is spontaneous with indigenous yeasts in stainless steel, with 7 days of maceration on the skins. Malolactic fermentation is carried out, and the wine then ages for 7 to 8 months in steel tanks on the fine lees before bottling in May. Total sulfites are kept to 25 mg/L.

The result is a deep amber-orange wine with real texture and density. The nose shows candied apricot, orange zest, spice, and a saline undertone. The palate is structured with lightly rustic tannins from the seeds, balanced by a clean, food-friendly acidity and a long finish. The name plays on the word maceration and the katana on the label, a deliberate symbol of breaking from the industrial winemaking that stripped Catarratto of its character for decades.

Works well alongside pasta with sardines and wild fennel, grilled oily fish, or salt-cured anchovies on toast. Aged caciocavallo or pecorino stagionato are classic local pairings that hold up against the wine's tannin and salinity. The structure also makes it a good match for spiced lamb or braised chicken with preserved lemon.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Elios

Elios was founded in 2015 by Guido Grillo and Nicola Adamo, two friends from Alcamo in the Province of Trapani. Both came from families with agricultural land that had previously sold grapes and olives to large industrial buyers. In 2015 they took over those family holdings and pivoted to estate production, bottling wine, olive oil, and honey directly under the Elios name.

The Elios vineyards are spread across three areas within roughly 15 kilometers of Alcamo: the Alcamo coastal zone, Camporeale to the south, and Monreale further inland. Each site has distinct soils and microclimates. Catarratto for Katamacerato comes from the Monreale area at approximately 200 meters on clayey black earth. All vineyards are farmed organically, without synthetic chemical inputs.

Winemaking under the Modus Bibendi label follows a no-addition approach: indigenous yeast fermentations, no fining agents, no selected enzymes, and only minimal sulfites at bottling (25 mg/L). For Katamacerato, whole grapes are macerated on their skins for 7 days in stainless steel, malolactic fermentation is carried out naturally, and the wine rests on fine lees in steel for 7 to 8 months before bottling in May.

Sicily, Italy

Sicily is Italy's largest island and its most planted wine region by area, with roughly 96,900 hectares under vine. The western portion of the island, covering the provinces of Trapani and Palermo, is dominated by calcareous, clay-rich soils and a warm Mediterranean climate tempered by sea breezes from the Tyrrhenian and Mediterranean coasts. The Monreale and Camporeale areas sit inland at elevations between 200 and 600 meters, where diurnal temperature swings help retain acidity in white grapes.

Terre Siciliane IGT is the island's broadest geographic indication, covering all of Sicily and its satellite islands. It allows for single-varietal bottlings of native grapes including Catarratto, Grillo, Nero d'Avola, and Nerello Mascalese. The Alcamo DOC, also in the Trapani province, is historically tied to Catarratto-based whites. Catarratto is concentrated across Trapani, Palermo, and Agrigento and accounts for a large share of western Sicily's total planted area, though it has historically been used for bulk wine and Marsala production rather than single-estate bottlings.

Signature on delivery is mandatory for wine deliveries. Please make sure someone is at the shipping address to sign for the package.

If applicable, please consider delivering the package to a business address to ensure someone is available to sign for the package.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
