This is one of the rare pet-nats that rewards patience in the bottle — the fine mousse and dry, mineral structure tighten with age into something genuinely complex. Parma-grown Sauvignon delivers aromatic intensity and a peppery vegetal note that sets it apart from Loire or New Zealand versions.

Il Mio Sauvignon is a pet-nat (pétillant naturel) made from 100% Sauvignon Blanc grown on the hills around Felino, in the Parma province of Emilia-Romagna. The grapes are fermented with native yeasts in stainless steel with brief skin contact, then bottled before fermentation is complete so the wine finishes in the bottle — the ancestral method. No temperature control, no fining, no filtration, no added sulfites. The wine is sealed with a crown cap and may contain sediment.

Sauvignon has deep roots on the Parma hills. In the 19th century, Count Brian imported vines from France and planted them around the castle of Felino, and the variety has thrived in the area's clay, silt, and limestone soils ever since. Donati's version is straw-yellow with fine, persistent bubbles. The nose is aromatic and floral with vegetal hints typical of Parma-grown Sauvignon; the palate is fresh, lively, and dry with good persistence.

The appellation is IGT Emilia (dell'Emilia), the broad catch-all IGT that covers the Emilia half of the region and allows producers like Donati to work outside stricter DOC rules. The wine is best served cold, at 8–10°C, and can reward a few years of bottle aging.

A natural match for the cured meats of Parma — culatello, prosciutto, and coppa cut through the wine's fine bubbles and acidity. Works equally well with delicate fish dishes, fried vegetables, or fresh goat cheese. Serve cold as an aperitif alongside Parmigiano-Reggiano.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Camillo Donati

The Donati estate was founded in 1930 when grandfather Orlando planted the first vineyard in Arola, in the locality of Groppone near Felino, approximately 20 km south of Parma. The estate is now run by the third generation — Camillo, his wife, and their children. The winery is located at Via Costa 3/A, Località Barbiano, Felino, Parma.

Donati farms approximately 11.5 hectares split across two sites: 7.5 hectares owned at Tenuta Sant'Andrea di Barbiano at around 300 meters elevation with a south-eastern exposure, and 4 hectares leased at Tenuta Bottazza (Vidiana, Langhirano) at roughly 250 meters. Soils are clay, silt, and limestone. Varieties grown include Malvasia Aromatica di Candia, Sauvignon, Lambrusco Maestri, Barbera, Trebbiano, Moscato Giallo, and others. Organic certification has been in place since 2001; the estate also practices biodynamics. All vineyard work is done by hand. Vines are trained in Guyot with approximately 3,500–4,000 plants per hectare. Copper and sulfur are used sparingly; no synthetic treatments are applied.

In the cellar, all grapes — including whites — undergo maceration on the skins for varying durations depending on the variety and vintage. After skin separation, fermentation finishes in open-air stainless steel tanks with native yeasts only. No temperature control, no thermal forcing, no chemical aids, no clarification, no acidification or deacidification. Wines are bottled before fermentation is fully complete, finishing in bottle via the ancestral method (metodo ancestrale, or rifermentato in bottiglia). The wines are unfined, unfiltered, and carry no added sulfites. They are sealed with crown caps and may show sediment.

Emilia-Romagna, Italy

Emilia-Romagna spans from the Po River plain in the north to the Apennine foothills in the south, covering provinces including Parma, Modena, Bologna, and Reggio Emilia. The hills running west to east at the foot of the Apennines are the region's premium wine-growing area, with soils of clay, silt, and limestone at elevations generally between 200 and 400 meters. The climate is continental, moderated slightly by the Adriatic to the east, with warm summers and cold winters that allow good acidity retention in the grapes.

Emilia-Romagna holds 19 DOC titles and 2 DOCGs — Albana di Romagna and Colli Bolognesi Classico Pignoletto — plus 9 IGT zones. The dominant varieties are Lambrusco, Malvasia, Trebbiano, Barbera, Bonarda, and Sangiovese. International varieties including Sauvignon Blanc have been present in the region since the 19th century, particularly around Parma where Sauvignon established a long foothold on the Colli di Parma. Donati's wines are labeled IGT Emilia (dell'Emilia), the broad indicator that covers the Emilia half of the region.

Signature on delivery is mandatory for wine deliveries. Please make sure someone is at the shipping address to sign for the package.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
