Tasting notes

This is what happens when two natural wine producers from neighboring regions pool their grapes and stop overthinking it. The Trebbiano keeps the Sangiovese honest, adding a bright, almost nervy acidity that makes the wine feel lighter and more drinkable than a typical Tuscan red. Tart cherry, dried herbs, and a distinct earthy pull on the finish.

  • Style: Dry, light-bodied red blend; Sangiovese and Trebbiano; high acidity; tart red fruit and earthy notes; natural, no added sulfites
  • Grapes & Terroir: Sangiovese and Trebbiano; Cortona (Tuscany) clay-sand-silt soils, ~600m elevation; Umbrian hillside near Lake Trasimeno; farmed without synthetic inputs
  • Winemaking: Spontaneous native yeast fermentation; no added sulfites; no filtration or fining; minimal intervention throughout
  • Serving: Serve at 55-60F; light chill acceptable; no decant needed
  • Pairing: Tomato-based pasta, pizza, braised lentils, cured pork, aged Pecorino Toscano
  • Similar To: For fans of light Sangiovese, Frappato, or natural field blends who want high acidity and savory character over fruit weight

Dopp.io Rosso is a collaboration between Filippo Calabresi of Do.t.e (Cortona, Tuscany) and Marco Durante of Il Signor Kurtz (Vallupina, Umbria). The name refers to the doubling of two distinct approaches and two distinct territories: Calabresi's vineyards in Cortona and Durante's plots near Lake Trasimeno. The blend is Sangiovese and Trebbiano, two grapes with a long shared history in central Italian winemaking.

Do.t.e farms without synthetic pesticides, herbicides, or fungicides. Musts and wines are handled without added chemical or enological inputs, including sulfites. Il Signor Kurtz works along the same lines: spontaneous fermentation with native yeasts, no temperature control, no filtration, no fining, no added sulfur. The result is a wine shaped entirely by the vintage and the grapes.

Blending Trebbiano into a red wine is not a novelty in Tuscany. The practice has roots in historic Chianti production, where white varieties were traditionally used to soften structure and lift aromatics. Here the technique is applied intentionally, using Trebbiano to add freshness and lift to the Sangiovese base. The wine is sold as Vino Rosso, outside any DOC classification.

Expect a lighter-bodied red with pronounced acidity, red fruit character, and a savory, earthy finish typical of Sangiovese from central Italy. The cross-regional sourcing brings together Cortona's clay-sand-silt soils and Umbria's hillside terroir near Lake Trasimeno, both producing grapes with good acidity and mid-weight structure.

Works well with dishes that have acidity built in: tomato-based pasta, pizza, or braised white beans with olive oil and sage. The light body and high acidity also make it a reasonable match for cured pork, lentil soups, or simply a board of aged Pecorino Toscano.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.

Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.

Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.

Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.

Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Do.t.e

Do.t.e is Filippo Calabresi's wine project based in Cortona, Tuscany. Calabresi studied at the International Wine Center in New York and apprenticed with winemakers in France, California, and Oregon before returning to Cortona. In 2013 his family took over Tenimenti d'Alessandro, and from 2014 Filippo began developing Do.t.e as a separate project focused on his own approach to natural viticulture. The estate's primary vineyards in Cortona were planted with Syrah in 2002 and Viognier in 1991, but the Do.t.e label sources across varieties and sites.

Filippo farms without systemic pesticides, fungicides, herbicides, or insecticides. Musts and wines are handled with no added chemical or enological inputs, including sulfites. He describes the project as experimental, oriented toward returning to agricultural fundamentals rather than applying conventional viticultural protocols.

Il Signor Kurtz is Marco Durante's label, produced from a small vineyard in Vallupina near Lake Trasimeno in Umbria, where he grows Sangiovese and Grechetto. Durante spent years working alongside Danilo Marcucci of Conestabile della Staffa in Umbria before launching his own label. His winemaking relies on spontaneous fermentation with native yeasts, no temperature control, no filtration, no fining, and no added sulfur. The Dopp.io Rosso collaboration joins these two producers, drawing on fruit from both Cortona and the Trasimeno hills.

Wine region

Tuscany / Umbria, Italy

Cortona sits in the hills of eastern Tuscany in the province of Arezzo, perched at nearly 600 meters above sea level above the Val di Chiana plain. The Cortona DOC was established in 1999 and covers vineyards on slopes near the Umbrian border. Soils are of Pliocene and Pleistocene origin, rich in clay, sand, and silt. The region's elevation drives meaningful diurnal temperature swings, slowing sugar accumulation overnight and preserving natural acidity in the grapes. Syrah dominates plantings, but Sangiovese and international varieties are also grown here.

Umbria, the landlocked region directly south of Tuscany, borders the Cortona DOC along the shores of Lake Trasimeno. Il Signor Kurtz operates from the small village of Vallupina on a hill near the lake. The territory around Lake Trasimeno produces Sangiovese and Grechetto at moderate elevations with a continental microclimate tempered by the lake's thermal mass. Both regions share a tradition of producing mid-weight reds with firm acidity, and the cross-regional sourcing in Dopp.io Rosso reflects how closely these two territories are linked geographically and stylistically.
