Come Together does something genuinely uncommon: it turns pressed grape pomace into a chillable, low-alcohol red with real character — tart raspberry, bramble, and a lip-smacking hit of verjus acidity that keeps every sip clean. It is one of the first piquette-wine blends produced on the East Coast, and it drinks more like a juicy, slightly fizzy red than anything you'd expect from a zero-waste byproduct.

Come Together is a piquette-wine hybrid, not technically a wine in the conventional sense. Old Westminster takes the grape pomace left over after pressing Blaufränkisch and Chambourcin, rehydrates it with water, and allows a spontaneous second fermentation with the residual sugars and native yeast still present on the skins. The resulting blend is 40% Piquette Rouge, 35% Blaufränkisch, and 25% Chambourcin, acidulated to taste with verjus for balance.

The 2020 pours a dense ruby-purple and shows aromas of bramble and dark plum. On the palate it delivers underripe raspberry and tart berry jam with low tannin and refreshing acidity. Because piquette is made from pomace rather than fresh-pressed juice, it comes in well below standard wine ABV — typically in the 5–9% range — and carries a gentle natural spritz.

Old Westminster ferments with wild yeast and bottles without fining or filtration, and no sulfites are added. The verjus acidulation — a technique using the juice of unripe grapes — is the winery's way of stabilizing and brightening the blend without synthetic additions. This is a zero-waste format: pomace that would otherwise be composted is transformed into a drink.

Serve well-chilled, straight from the fridge. Drink now; piquette is not a wine to age.

Serve well-chilled alongside charcuterie, soft washed-rind cheeses, or fish tacos. Its low tannin and bright acidity also make it a strong match for fried foods — the fizz and acid cut through the fat. Works as a casual pour at a backyard cookout where you want something lighter than a standard red.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Old Westminister

Old Westminster Winery was founded in 2010 by siblings Drew Baker, Lisa Hinton, and Ashli Johnson on their family's farm in Westminster, Carroll County, Maryland. The family — Jay and Virginia Baker as founding landowners, with their three children taking over operations — planted their first vines in spring 2011 after identifying the farm's rocky soil, elevation, and consistent breeze as suitable for viticulture. They planted 7,600 vines including Cabernet Franc, Syrah, Chardonnay, and Albariño at the Home Vineyard. They have since expanded to include Burnt Hill Farm and source additional fruit from neighboring Maryland vineyards.

Vineyard work is led by Drew Baker, who uses a pragmatic farming program built mostly around organic inputs but will use targeted synthetic applications when they are demonstrably less intrusive than organic alternatives — particularly given Maryland's challenging humidity and disease pressure. He systematically rotates spray programs to minimize resistance and maintains diverse cover crops to support beneficial insects. The estate does not hold organic certification but farms primarily with environmentally sound materials and handles all vineyard work by hand.

Winemaking is handled by Lisa Hinton, a chemist by training who has worked in both Maryland and Sonoma. In the cellar, fruit is hand-picked and sorted, moved by gravity rather than pump, fermented with indigenous yeast, and bottled without fining or filtration. Sulfite additions are minimal to none. Old Westminster has been among the earliest advocates of natural winemaking on the East Coast and was one of the first American producers to commercialize piquette at scale, earning national press attention for the format.

Old Westminster sits in Carroll County on Maryland's Piedmont Plateau, approximately 40 miles northwest of Baltimore. The winery's Home Vineyard is planted at 800 feet elevation on channery loam soils overlaying a bedrock of greenstone schist — rocky, well-draining ground that limits vine vigor. The region sits within the broader Maryland Piedmont, which encompasses Baltimore, Carroll, Frederick, Harford, Howard, and Montgomery Counties and supports both vinifera and hybrid varieties.

Maryland has three federally recognized AVAs — Linganore (1983), Catoctin (1987), and Cumberland Valley (1985) — though most producers, including Old Westminster, label under the state-level Maryland appellation. The climate is continental with a maritime moderating influence from the Chesapeake Bay, which extends the fall growing season and softens winter extremes. Maryland's humidity and disease pressure have pushed many growers toward cold-hardy and disease-resistant hybrid varieties alongside vinifera; Chambourcin and Blaufränkisch are both well-suited to the region's demanding conditions.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
