Brutal Vino Bianco is a skin-contact white wine from Filippo Calabresi's Do.t.e project in Cortona, eastern Tuscany. The blend of Trebbiano, Malvasia, and Viognier is hand-harvested from organically farmed vines — the Viognier dating to a 1991 planting — and co-macerated on skins for 15 days before spontaneous fermentation with native yeasts in ceramic vessels.

After maceration, the must ages for 12 months in ceramic barrels with no added sulfites, no fining, and no filtration. The result is bottled as Vino, Italy's most open classification, which gives Calabresi the freedom to work outside the varietal-specific rules of Cortona DOC. This is a deliberately low-intervention wine from start to finish.

On the palate, Brutal shows honey and caramel texture alongside blood orange, citrus peel, and a streak of minerality. The 15-day maceration gives it tannic grip and structure that separates it from conventional whites, while the ceramic aging preserves freshness without adding oak influence. The finish is dry and clean.

Do.t.e farms 4 hectares total in Cortona, a hilltop town in the province of Arezzo sitting nearly 600 meters above the Val di Chiana. The soils here are clay-based with marine sediment deposits, providing good moisture retention through dry summers. Calabresi uses no systemic pesticides, fungicides, herbicides, or insecticides in the vineyard.

The tannin structure and dry finish make this a practical match for oily or fatty dishes that would overwhelm a conventional white. Try it with seared branzino, fritto misto, or a board of aged pecorino and cured pork. It also holds up well to dishes with a little spice or acidity, like a raw tomato pasta or herb-dressed grains.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Filippo Calabresi founded Do.t.e — short for 'down to earth' — after discovering his vineyard in Cortona in 2014. He began recovering existing vines, including Viognier planted in 1991 and Syrah planted in 2002. Calabresi describes the project as an experimental entity seeking alternative answers in contemporary viticulture, with a stated focus on health, ethics, and everyday drinking.

Do.t.e farms 4 hectares in total across plots in Cortona, some owned and some rented. Farming began in 2015 and follows sustainable practices with no systemic pesticides, fungicides, herbicides, or insecticides used in the vineyard. The project is run without formal organic certification but adheres to organic principles throughout.

In the cellar, Calabresi works without any chemical or enological additives, including sulfites. Fermentation is spontaneous with native yeasts. Depending on the wine, grapes are either destemmed or used whole-cluster. Aging ranges from 6 to 9 months in inert vessels for lighter wines, or up to 12 months in ceramic and terracotta for more structured releases like Brutal. All wines are bottled as Vino — Italy's most basic classification — which Calabresi considers the only designation that allows genuine creative freedom.

Cortona is a hilltop town in the province of Arezzo in eastern Tuscany, sitting nearly 600 meters above the Val di Chiana plain. The Cortona DOC was recognized in 1999 and covers varietal wines from both local and international grapes. The town sits almost equidistant between the Adriatic and Tyrrhenian coasts, at the base of the Apennine mountains. Soils in the zone are primarily clay-based with deposits of Macigno Toscano sandstone and marine sediments, providing good water retention during the dry Tuscan summers.

The high elevation brings meaningful diurnal temperature swings that slow sugar development overnight and preserve acidity in the grapes — an important factor for structured, balanced wines. Cortona DOC's most planted variety is Syrah, which accounts for roughly 80 percent of DOC production. The white DOC specifications are limited to single-varietal Grechetto, Chardonnay, and Sauvignon Blanc, plus a Vin Santo made from Trebbiano Toscano, Grechetto, and Malvasia Bianca Lunga. Blended whites like Brutal fall outside DOC regulations and are labeled as Vino, giving producers full creative latitude.

Carrier will try to delivery a package up to three times before returning the package to us.
