Auxerrois is rarely bottled solo, and skin contact here pulls out a savory, faintly smoky character the grape doesn't show in direct-press form — white peach and mandarin up front, a dry saline finish behind. Seven days of whole-bunch maceration gives it fine tannin grip without losing the grape's natural roundness.

Jean-Marc Dreyer's Auxerrois Maceration is a 100% Auxerrois orange wine from Rosheim, Alsace. Auxerrois — also called Pinot Auxerrois in the region — is a full sibling of Chardonnay, sharing the same parentage of Pinot and Gouais Blanc. It grows on clay-limestone soils (argilo-calcaire) across 25 parcels spread over the hillsides surrounding Rosheim.

Whole bunches are macerated on the skins for 7 days, then pressed and fermented with indigenous yeasts. The wine ages for 10 to 11 months in large Alsatian oak foudres and demi-muids without topping up, allowing a light voile to develop. It is unfined, unfiltered, and zero sulfur is added at any stage in the vineyard or cellar.

In the glass, expect an amber-gold color with floral and slightly smoky aromas, notes of white peach, stone fruit, mandarin, and a saline mineral edge on the finish. The skin contact builds fine tannin texture without heaviness — the wine stays fresh and direct.

Part of Dreyer's Origin series, which isolates each single Alsatian variety from the same vintage. The 2019 harvest was hand-picked, and the farming is certified organic and biodynamic (AB label).

Works well with smoked fish, Iberico ham, or seafood platters where the wine's salinity and fine tannins can push back against richness. Aged Munster or Comté from the region are natural partners. Roasted poultry — chicken or guinea fowl — also pairs cleanly with the wine's floral and stone-fruit character.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Jean-Marc Dreyer

Jean-Marc Dreyer operates out of Rosheim, Alsace, where the Dreyer family estate — Dreyer & Fils — dates to 1830. The property sits between Obernai and Molsheim in the Bas-Rhin. Jean-Marc took over the estate in 2003 and began converting to biodynamic farming immediately, using Steiner-directed preparations from the start. He trained at the wine school in Obernai and completed a stage with Patrick Meyer in nearby Nothalten, one of the early pioneers of natural wine in Alsace. He has also drawn influence from Patrick Bouju in the Auvergne and Jean-Louis Pinto near Limoux.

The estate covers six hectares split across 25 parcels on the hillsides surrounding Rosheim. Soils are predominantly clay-limestone with fossil deposits dating back approximately 50 million years. The vineyards are fully grass-covered with no tractor passes since 2020 (except for harvest logistics). The estate received certified organic (AB label) status in 2014, having farmed biodynamically since 2003. Varieties grown include Auxerrois, Sylvaner, Riesling, Pinot Gris, Gewurztraminer, Muscat d'Alsace, and Pinot Noir. Auxerrois and Sylvaner are the dominant plantings by area.

In 2009, following a pilgrimage to Santiago de Compostela, Dreyer committed to zero sulfur additions across all wines. His winemaking centers on whole-bunch skin maceration, which he sees as an ancestral Alsatian tradition rather than a modern trend. For the Origin series, bunches are macerated for 7 days, fermented with indigenous yeasts, and aged 10 to 11 months in large Alsatian oak foudres and demi-muids without topping up. Wines develop a light voile during aging. No fining, no filtration, and no additives of any kind are used. A separate manual vertical press is used for macerated wines.

Alsace, France

Alsace runs north to south along the eastern edge of France, bordered by the Rhine River and Germany to the east and the Vosges Mountains to the west. The Vosges create a strong rain shadow, making Alsace one of the driest wine regions in France. The climate is semi-continental: warm summers, cold winters, and long autumns that allow slow, even ripening. Rosheim sits in the Bas-Rhin, in the northern part of the appellation, approximately 25 kilometers southwest of Strasbourg, on the foothills of the Vosges.

Alsace produces wines under three main appellations: Alsace AOC, Alsace Grand Cru AOC, and Crémant d'Alsace AOC. The Grand Cru designation covers 51 named sites and is restricted to four noble varieties — Riesling, Pinot Gris, Muscat, and Gewurztraminer. Auxerrois is not permitted in Grand Cru wines but is the second-most planted variety in Alsace after Riesling, commonly blended anonymously into wines labeled Pinot Blanc or used in Crémant d'Alsace. Soils around Rosheim are predominantly clay-limestone (argilo-calcaire), a terrain well suited to Auxerrois.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
