Tasting notes

This rosato punches above its weight with a deeper, more saturated color than most Tuscan pinks, and a savory, mineral edge that keeps it interesting across a full meal. The zero-sulfur winemaking is handled with unusual precision, keeping the wine clean and fruit-forward without any of the oxidative drift that can plague no-SO2 rosés.

Sine Felle Rosato is a Toscana Rosato IGT made by Roberto Moretti and Lucia Mori at Podere Casaccia, a 12-hectare biodynamic farm on the hills of Scandicci, just west of Florence. The vineyards sit on soils of clay, loam, and fossil-rich sands, and are planted with old clones of Sangiovese and Canaiolo ranging from 40 to 55 years of age. The estate holds Demeter biodynamic certification and is farmed without pesticides, herbicides, or chemical fertilizers, using biodynamic preparations and green manuring with leguminous cover crops.

Grapes are harvested early to preserve freshness and acidity. After a brief 6-hour skin maceration, the wine ferments spontaneously with native yeasts in stainless steel, with no temperature control. It is aged in stainless steel for a few months, then bottled unfined and unfiltered with zero added sulfur. Production is tiny, typically under 2,000 bottles per vintage, and bottles are hand-numbered.

Sine Felle means "without bitterness" in Latin, a phrase that describes both the wine's approachable, food-friendly character and Moretti's philosophy. The wine shows a deeper-than-average rosato color from the skin contact, with red cherry, dried rose petal, and a savory, mineral finish. Give it 15 minutes of air after opening to allow the wine to fully open up, as is common with zero-sulfur wines.

The wine's savory acidity and cherry fruit make it a natural match for Florentine antipasti, tuna with white beans, or grilled branzino with herbs. It handles richer dishes well too, including pasta with tomato-braised rabbit or a simple margherita pizza. Serve well chilled at around 48-52F.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.

Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.

Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.

Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.

Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Podere Casaccia

Podere Casaccia is a small family farm on the hills of Scandicci, in the province of Florence. Roberto Moretti purchased the estate in 1999, drawn by a family connection to the land. His wife Lucia Mori joined him in the project, and the two run all phases of production themselves, from pruning to bottling. Roberto is a physician by training, a background that shapes the hygienic precision in his cellar work.

The farm covers approximately 12 hectares, split between around 6 hectares of vineyards and 6 hectares of olive groves and woodland. The vineyards are planted with old clones of Sangiovese, Canaiolo, Malvasia Nera, Trebbiano, and Malvasia Bianca, with vine ages ranging from 40 to over 60 years. Moretti has also planted indigenous varieties including Pugnitello and Foglia Tonda, which he is working to recover from near obscurity. The estate holds Demeter biodynamic certification and is farmed using biodynamic preparations, green manuring, hand-pruning, and preventive applications of copper and sulfur only.

All harvesting is done by hand. In the cellar, fermentation is spontaneous using only native yeasts, with no temperature control. Wines are bottled unfined and unfiltered with zero added sulfur. Production across all wines is very small, with the Rosato typically produced in fewer than 2,000 bottles per vintage. Bottles are hand-labeled and hand-numbered by Roberto and Lucia.

Wine region

Tuscany, Italy

Tuscany is a central Italian region that spans from the Tyrrhenian coast inland to the Apennine foothills, covering diverse elevations, soil types, and microclimates. The climate is predominantly Mediterranean, with hot, dry summers and mild, wet winters. Inland hillside zones experience significant diurnal temperature shifts that preserve acidity and develop aromatic complexity in grapes, particularly the late-maturing Sangiovese. Soils across the region vary from galestro, a loose marl-based schist, to alberese, a hard limestone, with clay, sand, and fossil-rich loam appearing in zones closer to Florence.

Tuscany holds 11 DOCG and 41 DOC appellations, with Sangiovese as the dominant grape across most of the region's important zones, including Chianti Classico, Brunello di Montalcino, Vino Nobile di Montepulciano, and Morellino di Scansano. Scandicci, where Podere Casaccia is located, falls within the Chianti Colli Fiorentini production area, though wines like the Sine Felle Rosato are classified under the broader and more flexible Toscana IGT designation. The IGT Toscana category allows producers to use non-traditional varieties and techniques, and it also accommodates growers focused on indigenous varieties and natural winemaking who work outside the constraints of stricter appellations. Canaiolo, once a key component of the traditional Chianti blend, is among the indigenous varieties being preserved by estates like Podere Casaccia alongside rarer grapes such as Pugnitello and Foglia Tonda.
