Tasting notes

This is a Syrah rosé grown at 550-600 meters on granite-arena soils in Tarerach, which gives it a cool-climate freshness you rarely find this far south in France. Wild strawberry, garrigue, and a tangy rhubarb edge come through cleanly, held together by bright acidity and no winemaking additions whatsoever.

Rosé de Zaza comes from Syrah vines planted at 550-600 meters elevation in Tarerach, a granite-soiled village in the Pyrénées-Orientales, roughly 20 kilometers west of Perpignan. The wine is labeled Vin de France because this parcel sits outside the Collioure AOC boundary. Vinification is direct press, native yeast fermentation in stainless steel vats, with no fining, no filtration, and zero added sulfites. Bottled early, typically in January following harvest.

The vines are farmed organically (Ecocert certified) and biodynamically, with permanent cover crop and inter-row work done by horse. Yields run around 20 hl/ha. The granite-arena soils at this altitude produce a Syrah with markedly different character from the domaine's schist-based Banyuls parcels — cooler temperatures preserve freshness and lift that the lower coastal sites cannot achieve.

On the nose, expect wild strawberry, garrigue, and red currant with a tangy, almost rhubarb-like edge. The palate is juicy and structured for a rosé, with crisp acidity and enough weight to pair with food. This is one of Jordi Perez's own cuvées, introduced after he took over Casot des Mailloles from founders Alain Castex and Ghislaine Magnier in 2015. The wine was later renamed Médée in subsequent vintages.

Serve well-chilled with fresh anchovies or grilled sardines, which match the wine's saline edge and bright acidity. It holds up to light charcuterie, olive tapenade, and fresh goat cheese. Also works well with a simple Niçoise salad or roasted peppers with herbs.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Casot des Mailloles

Casot des Mailloles was founded in 1994 by Alain Castex and Ghislaine Magnier on the steep terraced slopes above Banyuls-sur-Mer, in the Pyrénées-Orientales. The estate takes its name from the casots, dry-stone shelters traditionally used by vineyard workers throughout the Banyuls hillsides. Early on, Castex vinified in a repurposed Citroën garage and pursued what was then an unusual approach for the region: fully natural winemaking with no added sulfites, no fining, and no filtration. The estate became a reference point in the French natural wine movement.

In March 2015, Catalan winemaker Jordi Perez took over as sole owner after Castex and Magnier retired. Perez had studied viticulture and oenology at Blanquefort and worked across Bordeaux Grand Crus, large cooperatives in Saint-Chinian and Fitou, and smaller estates before arriving in Banyuls. He continued Castex's biodynamic and organic practices (certified by Ecocert) and added a new parcel in Tarerach, about 20 kilometers inland and west of Perpignan, on granite soils at 550-600 meters elevation. All vineyard work is done manually, with inter-row cultivation by horse and permanent cover crop throughout.

All vinifications at Casot des Mailloles are natural: no sulfites are added, wines are never fined or filtered, and only native yeasts are used. The Tarerach parcels, including Rosé de Zaza, are direct-pressed and fermented in stainless steel vats, then bottled early — typically in January following the harvest. The Banyuls parcels for the Collioure AOC reds receive short macerations and are aged in vats or old barrels. Total production across the domaine is limited to several thousand bottles per year.

Wine region

Roussillon, France

Roussillon sits in a geographic amphitheater in the far south of France, bounded by the Pyrenees, the Mediterranean, Spain, and the Corbières hills. The region receives over 320 days of sunshine annually and is swept by the tramontane, a dry northern wind that reduces disease pressure and aids vine health. Soils vary considerably: the coastal Banyuls and Collioure zones are dominated by ancient dark schist, while interior areas like Tarerach feature granite and granitic arena soils at elevations between 500 and 650 meters.

The key appellations of Roussillon include Collioure (dry red, white, and rosé wines), Banyuls and Banyuls Grand Cru (fortified Vins Doux Naturels based on Grenache), Côtes du Roussillon, and Côtes du Roussillon Villages. Wines produced outside appellation boundaries or from non-permitted varieties are classified as Vin de France. Grenache Noir dominates the region's traditional plantings, while Syrah, Carignan, Mourvèdre, and Grenache Blanc and Gris are also widely grown. Roussillon is France's hottest and driest wine region, and its best producers manage this through altitude, organic farming, and extremely low yields.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
