Tasting notes

This is Cahors Malbec with real precision — dark fruit and iron-driven minerality from 170-meter siderolithic slopes, kept lively by naturally high acidity and ultra-fine tannins. Whole-berry fermentation and zero sulfur give it an unguarded freshness that oak-heavy Cahors wines rarely achieve.

  • Style: Dry, medium-bodied red; dark berry fruit, tomato leaf, white pepper, iron-driven minerality; no added sulfites; 13% ABV
  • Grapes & Terroir: 100% Côt (Malbec); old vines planted late 1970s; Duravel, ~170m elevation; siderolithic soils — iron-rich clay over hard limestone
  • Winemaking: Whole-berry tank fermentation; aged in barrel in natural limestone cave; no sulfur added; unfiltered; no oenological inputs
  • Serving: Serve at 60-64°F; 20-30 min decant recommended
  • Pairing: Duck confit, lamb chops, cassoulet, mushroom dishes, aged hard cheese
  • Similar To: For fans of structured Beaujolais cru or Loire Cabernet Franc who want more mineral grip and darker fruit

Regain is a 100% Côt (Malbec) from three small parcels on the heights of Duravel, at approximately 170 meters elevation, planted in the late 1970s on siderolithic soils — iron-rich clay over hard limestone bedrock. The 2019 vintage was an excellent growing season in Cahors. The fruit was vinified in tank with a high proportion of whole berries, then aged in barrel inside a natural limestone cave carved into the hillside near Alary. No sulfur was added at any stage, and the wine was bottled unfiltered.

On the palate, the wine is light to medium bodied with ultra-fine tannins and lively acidity. The aromatic profile is precise and focused: dark berry fruit, tomato leaf, white pepper, and a mineral undercurrent from the iron-rich soils. The old-vine Côt gives structure without weight, and the freshness holds the wine together in a way that separates it clearly from heavier Malbec styles.

All Ostal Levant wines are released as Vin de France rather than under the Cahors AOC label. The domaine uses no oenological inputs of any kind — no added sulfites, no fining agents, no commercial yeasts. Vineyard work is done in part with horses.

The wine's acidity and fine tannins make it a natural match for duck confit, lamb chops with herbs, or a cassoulet with white beans and pork. Its earthy, mineral character also works well alongside mushroom dishes and aged hard cheeses. Serve with a 20-minute decant to open the fruit.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.

Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.

Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.

Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.

Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Ostal Levant

Louis and Charlotte Pérot farm 3.5 hectares of vineyards near Puy-l'Evêque in the Cahors appellation and have made wine as L'Ostal Levant since 2012. Both previously worked in publishing and literature in Paris. Louis obtained a BPREA viticulture degree at the Lycée Viticole in Beaune and interned with Cahors vigneron Simon Busser, who loaned the couple their first parcel. In 2015 they moved to a dilapidated farmstead at the lieu-dit Alary, on the calcareous plateau above the Lot River, which they have been renovating since.

The domaine farms organically with no synthetic inputs, using horses for part of the vineyard work. Soils at their main holdings above Puy-l'Evêque are heavy clay over a limestone subsoil, rich in iron deposits. Since 2016, the Pérots have planted additional varieties including Chenin Blanc, Mauzac, Loin de l'Oeil, Syrah, and a massal selection of Côt from Touraine cuttings, as well as hybrid varieties, to diversify beyond the core Malbec plantings.

In the cellar, winemaking varies by cuvée and vintage: fermentation may use whole clusters, whole berries, or destemmed fruit, with decisions made by intuition rather than fixed protocol. No oenological inputs are used at any stage — no added sulfites, no commercial yeasts, no fining agents. All wines are aged in barrel inside a natural limestone cave carved into the hillside near Alary, where temperature and humidity remain constant. Wines are bottled unfiltered and released as Vin de France.

Wine region

Southwest France, France

Cahors sits in the Lot department of southwestern France, centered on the meandering Lot River. The appellation was established in 1971 and produces only red wine. Vineyards occupy three terrace levels above the river as well as the limestone causse plateau above, which reaches 250 to 350 meters. The lower terraces are composed of sand, gravel, and clay; the upper terraces combine clay-silica soils with increasing proportions of limestone; and the causse itself sits on thin, rocky Kimmeridgian limestone with pockets of iron-rich clay. The climate is Atlantic-influenced, with hot summers and wet winters, and a secondary Mediterranean influence that distinguishes Cahors from Bordeaux.

Côt — the local name for Malbec, also called Auxerrois — is the dominant grape, making up at least 70% of any Cahors AOC wine by law, with Merlot and Tannat permitted in supporting roles. Cahors Malbec is structurally distinct from its Argentine counterpart: tighter, leaner, and more mineral, with firm tannins and natural acidity rather than the plush, fruit-forward profile of high-altitude Mendoza. A new generation of natural wine producers around Puy-l'Evêque, including Ostal Levant, has brought renewed attention to the region's potential for fresher, terroir-specific styles.
