Pansa Rosada is one of Catalonia's rarest grapes — a red-skinned mutation of Xarello grown by almost no one, here from 40-year-old vines on calcareous Garraf soils that push real mineral tension through the mousse. The ancestral method and 12 months on lees give it a textural depth that most petillant-naturel wines never reach.

Cartoixa Vermell is the Catalan name for Pansa Rosada, a red-skinned somatic mutation of Xarello indigenous to Penedes. The grapes for this wine come from Vinya Martina, a single parcel planted in 1976 on calcareous sandy soils at the Can Ramon estate in Sant Pere de Ribes, within the Garraf Natural Park. At 740 feet elevation with the Garraf Mountains to the northeast and the Mediterranean to the south, the vines are dry-farmed and hand harvested.

This is made using the ancestral method: grapes are direct-pressed, cold-settled for 36 hours, then fermented spontaneously in 55-liter glass demijohns with native yeasts. Fermentation finishes in the bottle, where the wine ages on its fine lees for a minimum of 12 months before manual disgorgement. No fining, no filtration, and zero added sulfites — total SO2 is 10 mg/L.

The resulting wine pours a pale salmon-gold with fine, persistent bubbles. Pansa Rosada's low tannin content means the pink skin pigment contributes color without grip, keeping the wine light and refreshing. Expect aromas of grapefruit, white peach, pear, and a touch of flint from the calcareous soils, with a crisp, saline finish.

Manel Avino farms all 22 hectares of estate vineyards biodynamically, following the lunar calendar for all vineyard and cellar work. He stopped adding sulfites after his wife was diagnosed with stomach cancer. The estate has been in the Avino family since the 14th century.

Pour this alongside grilled sardines or anchovies on toast — the saline, citrus-driven acidity cuts through the fish oil cleanly. It also works well with raw shellfish, salt cod fritters, or a plate of Manchego and membrillo. The fine bubbles and dry finish make it a strong aperitivo option on its own.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Clos Lentiscus

Clos Lentiscus is the estate wine project of Manel and Joan Avino, who returned to their family's 14th-century farmhouse Can Ramon in Sant Pere de Ribes in 2001 after the death of their father. The property had been in commercial decline since the 19th century, when phylloxera, the Spanish Civil War, and industrialization ended its trade in wine to France and the American colonies. The brothers relaunched it with the goal of making estate wine from the indigenous varieties already growing there.

The estate covers 67 hectares in the Garraf Natural Park, with 22 hectares under vine. All vineyards are dry-farmed and hand harvested. Manel farms biodynamically: no pesticides or herbicides, plowing with a horse named Ringo, sheep grazing for weed control, beehives for pollination, and all vineyard and cellar work timed to the lunar calendar. He stopped adding sulfites entirely after his wife's cancer diagnosis. Total SO2 across his wines runs at or below 10 mg/L.

In the cellar, Manel works with native yeasts exclusively, using both primary and secondary fermentation without commercial additions. For the ancestral-method sparkling wines, fermentation begins in 55-liter glass demijohns and completes in bottle, where wines rest on their fine lees for a minimum of 12 months before manual disgorgement. No fining, no filtration, and no expedition liquor is used.

Catalunya, Spain

The Penedes DO sits southwest of Barcelona in Catalonia, framed by the coastal Garraf Massif to the south and the inland pre-coastal ranges to the north. The region divides into three subzones by elevation: Baix Penedes along the warm coastal plain, Mitja Penedes in the central valley around Sant Sadurni d'Anoia, and Alt Penedes at 500 to 800 meters where cooler temperatures preserve acidity. Clos Lentiscus sits in the Garraf subzone near Sitges, a coastal area with particularly shallow, calcareous soils containing marine fossils and strong sea influence.

Penedes has a Mediterranean climate — hot, dry summers and mild winters with moderate rainfall concentrated in spring and autumn. Soils across the DO are highly varied: sandy and clay-limestone in the lower zones, shallow calcareous and Triassic deposits closer to the coast. The DO is best known internationally as the source of Cava, made from Xarello, Macabeo, and Parellada. Pansa Rosada (Xarello Vermell), a red-skinned mutation of Xarello, is rarely grown outside the coastal zones of Penedes and historically faced extinction as suburban sprawl compressed coastal vineyard land.
