Moscato Giallo vinified dry is a genuine rarity — this grape almost exclusively ends up as passito or sparkling sweet wine in Colli Euganei, so finding it fermented to dryness with native yeasts and zero additions is genuinely unusual. The result keeps the variety's floral and citrus terpene character (orange blossom, white peach, lemon peel) while delivering salinity and a clean mineral finish driven by the volcanic trachyte and basalt soils below Cinto Euganeo.

I Castagnucoli's Moscato Giallo comes from Cinto Euganeo in the southern Colli Euganei, where Nicola Dal Santo farms 3.6 hectares of mixed land — vines alongside olive groves, orchard, vegetable plots, and forest. The soils beneath his vines are split between ancient calcareous limestone, formed from a prehistoric seabed, and volcanic trachyte and basalt, pushed up roughly 30 million years ago when volcanoes emerged from that same sea. This geological duality is a defining feature of the Euganean Hills appellation and drives the mineral character in the wine.

Moscato Giallo, also known as Fior d'Arancio in Colli Euganei, is naturally a highly aromatic grape with thick skins and high terpene content — linalool, geraniol, and citronellol give it signature floral, citrus, and stone fruit aromatics. Vinified completely dry here, the grape's inherent perfume is stripped of its usual sweetness, leaving behind a saline, taut white wine rather than the passito or sparkling styles the variety is most commonly associated with in this appellation.

In the cellar, Nicola works with minimal intervention: spontaneous fermentation with native yeasts, no temperature control, aging in small vessels of steel, wood, or clay depending on the wine. No fining, no filtration, no added sulfites. Grapes are destemmed by hand and moved without pumps. This is a wine made without the safety nets of conventional enology.

The wine's salinity and floral lift make it a natural match for raw or lightly dressed seafood — oysters, crudo, grilled branzino with herbs. It also works alongside soft fresh cheeses like burrata or young pecorino where the aromatic profile can mirror the milky sweetness without being overwhelmed. Vegetable-forward dishes with lemon, fennel, or white asparagus are solid options too.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

I Castagnucoli

I Castagnucoli is located in Cinto Euganeo on the western edge of the southern Colli Euganei. Nicola Dal Santo took over the farm in 2010, transitioning from a career as an archaeologist specializing in prehistory. The land itself had been in the family since 1974, when his parents purchased it and began farming without synthetic chemicals. The family obtained organic certification in 1994. Nicola later dropped the formal certification due to the bureaucratic burden it placed on a small operation producing only a few thousand bottles per year, though he continues to farm according to organic principles and incorporates elements of biodynamic practice, including attention to the lunar calendar and use of natural preparations.

The farm covers 3.6 hectares and functions as a genuinely mixed agricultural holding — vines coexist with olive groves, an orchard, vegetable gardens, and forest. Grape varieties grown include Garganega, Moscato Giallo, Glera, Marzemina Bianca, Raboso Veronese, and several indigenous and rare local varieties such as Turchetta, Cavarara, and Corbinello. Vineyards sit on two distinct soil types: calcareous limestone where the land was once ancient seabed, and trachyte and basalt of volcanic origin. Vine treatments are limited to copper and sulfur.

In the cellar, Nicola works without mechanical pumps — grapes are destemmed by hand and moved by gravity. Fermentation is spontaneous with native yeasts and runs without temperature control. Wines age in small vessels of stainless steel, wood, or clay. No fining agents, no filtration, and sulfur is added only if deemed necessary. The winery name derives from a small ridge between the vineyard plots called 'i Castagnucoli,' though there are no chestnut trees there.

Colli Euganei, Italy

Colli Euganei sits southwest of Padua in the Veneto, a cluster of roughly one hundred volcanic hills rising abruptly from the flat Po Plain. The area sits within the Euganean Hills Regional Park. The hills were formed over two distinct geological periods: the region was once a seabed, leaving calcareous limestone and clay soils, and then approximately 30 to 45 million years ago volcanic activity pushed trachyte and basalt formations up through the seabed. The result is an unusually heterogeneous mix of soil types within a compact area, with roughly 3,000 to 4,000 hectares of vines planted across fifteen sub-zones. The climate is Mediterranean, with dry warm summers and rainfall concentrated in cooler months. The southern sub-zones, including Cinto Euganeo, tend to be slightly warmer and drier than the north.

The Colli Euganei DOC covers municipalities across the Province of Padua including Arqua Petrarca, Cinto Euganeo, Baone, Este, Vo, and Teolo, among others. The appellation permits a wide range of varieties, with Merlot, Cabernet Sauvignon, Carmenere, Garganega, and Moscato Giallo among the most significant. Moscato Giallo is the key grape in the Colli Euganei Fior d'Arancio DOCG, elevated to DOCG status in 2011, which is almost exclusively made as a sweet or sparkling wine. Dry still versions of Moscato Giallo fall under the broader Colli Euganei DOC. White varieties are generally planted on cooler north-facing slopes while red grapes take the warmer south-facing positions.
