Pure Merlot from Cahors — a region defined by Malbec — grown on alluvial soil over limestone near Prayssac, aged in old barrels inside a natural limestone cave. The result is savory and precise: red fruit, tomato leaf, and white pepper with silky tannins and a mineral lift that separates it from heavier Southwest reds.

Les Trilles is a 100% Merlot from Ostal Levant, sourced from a parcel near the village of Prayssac in the Lot department of Southwest France. The vineyard sits on alluvial topsoil over a limestone base, a soil profile that keeps the wine lean and mineral despite the warmth of the 2019 growing season. Released as Vin de France rather than under the Cahors AOC, which requires at least 70% Malbec.

The grapes are destemmed and fermented in stainless steel tank before moving to old barrels for elevage in a limestone cave dug into the hillside near the Pérots' farm at Alary. The cave environment, with its low temperatures and high humidity, preserves freshness and adds a fine, precise texture. No oenological additives are used at any stage; the wine is unsulfited and unfiltered.

The 2019 vintage in Cahors was a warmer year that produced ripe, approachable fruit. For Les Trilles, that translates to supple red fruit, tomato leaf, white pepper, and a lightly savory finish carried by naturally firm acidity. The palate is light to medium bodied with ultra-fine tannins — an unusual expression for a Southwest French red.

Ostal Levant farms organically. The wines consistently reflect the detail of their individual parcels and Louis Pérot's approach of minimal intervention from harvest through bottling.

Works well with herb-roasted chicken, braised lentils with thyme, or a simple charcuterie plate. The savory character and firm acidity also make it a natural match for dishes with tomato-based sauces. Serve slightly cool, around 60-62F.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Ostal Levant

Louis and Charlotte Pérot founded Ostal Levant in 2012, producing their first vintage in 2013 from leased parcels in the Lot. Both had careers in publishing and literature in Paris before relocating to Southwest France. Louis completed a BPREA oenology degree at the Lycée Viticole in Beaune, then apprenticed with Cahors vigneron Simon Busser, who mentored the couple in organic farming and provided their first parcel.

In 2015, the Pérots purchased and began renovating a dilapidated hillside farm in the lieu-dit Alary, near Puy-l'Evêque, where the soils are heavy clay over limestone, distinct from the sandier alluvial soils nearer the Lot. They farm approximately 3.5 hectares organically, with vines split between the home estate at Alary and leased parcels near Duravel and Prayssac. Since 2016 they have planted additional varieties including Chenin Blanc, Mauzac, Loin de l'Oeil, and various hybrid varieties.

In the winery, red wines are typically destemmed and fermented in stainless steel tank, then moved to old barrels for elevage in a limestone cave carved into the hillside near Alary. The cave's cool temperature and high humidity provide stable aging conditions. No oenological additives are used; the wines are unsulfited and unfiltered. The house releases the majority of its wines as Vin de France rather than seeking Cahors AOC agrément.

Cahors sits in the Lot department of Southwest France, roughly 100 miles east of Bordeaux. The vineyards hug the banks of the Lot River for over 40 kilometers, centered on key communes including Prayssac, Puy-l'Evêque, Grézels, and Luzech. The climate draws from both Atlantic and Mediterranean influences, with summers warmer and drier than Bordeaux, which allows grapes to ripen fully while naturally limiting fungal pressure.

The appellation's vineyard sites fall into two broad categories: alluvial terraces along the river valley floor and the elevated limestone plateau, called the Causse, above. Valley soils are alluvial gravel and chalky stone; plateau soils are clay and rocky limestone with high iron content. The Cahors AOC mandates a minimum of 70% Malbec (locally called Côt or Auxerrois), with Merlot and Tannat permitted as blending partners. Producers working outside those rules, including Ostal Levant, release their wines as Vin de France.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
