Skin contact gives this Sauvignon Blanc a grip and amber hue you would not expect from the grape: grapefruit and apricot up front, then a white pepper and apple skin finish that lingers. At around 12% ABV, it stays light on its feet while the 9-day maceration adds real structure.

Fire Fuego is a zero-zero skin-contact Sauvignon Blanc sourced from Denmark St. Vineyard on the east side of the town of Sonoma, in Sonoma Valley AVA. The site has been farmed by the Clouse family for six generations. Eric and Holly Clouse use no-till practices, permanent cover crops, and no synthetic pesticides or herbicides. The soils are fertile grey loam, left untilled to preserve structure and moderate vine vigor.

After hand harvesting, the fruit was split across two tanks: one closed-top carbonic (CO2 added until ambient fermentation began) and one open-top maceration tank punched down twice daily. Both lots spent a combined 9 days on skins before pressing. The wine fermented to dryness with ambient yeast, underwent full malolactic fermentation with some lees stirring, and was aged 4 months in neutral French oak. No cold stabilization, no fining, no filtration. Zero sulfites added at any point.

Fres.co (shorthand for Fresh Wine Co.) is the label of Jack Sporer, who makes wine at Magnolia Wine Services, a collective custom crush facility in Sonoma that houses multiple low-intervention producers. Sporer began his career at larger commercial operations in Sonoma before launching his own label focused on regeneratively farmed Sonoma Valley fruit. One percent of all Fres.co sales is donated to Zero Foodprint, a nonprofit supporting agricultural climate solutions and soil carbon sequestration.

The wine pours a pale amber-gold from the skin contact. Expect citrus zest, grapefruit, and apricot on the nose, with ripe pineapple and a spicy backbone of white pepper. On the palate, light tannin from the skins gives texture without weight. Bright acidity and a dry, mineral finish keep it focused.

A natural alongside oysters, ceviche, or grilled shrimp with citrus. The skin tannin and acidity hold up against spicy dishes, so Thai green curry or fish tacos with salsa verde are good calls. Goat cheese and boquerones both work well.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Sporer makes wine at Magnolia Wine Services, a collective custom crush facility at 21481 Eighth St. E. in Sonoma, which functions as a shared infrastructure hub for a group of like-minded low-intervention producers. The Fres.co approach to vineyard sourcing requires that all growers farm without synthetic pesticides or herbicides; Sporer actively works with growers to transition toward organic and regenerative practices, and the grower's name appears on every back label.

In the cellar, Fres.co wines are made with ambient yeast, no fining agents, no filtration, and no cold stabilization. Sulfur additions depend on the cuvee; Fire Fuego is bottled as a zero-zero wine with no additions or removals of any kind. One percent of all sales is donated to Zero Foodprint. The label uses ultra-light, domestically produced, recyclable glass bottles to reduce shipping emissions per case.

Sonoma Valley, United States

Sonoma Valley AVA occupies a roughly 17-mile corridor in the southeastern corner of Sonoma County, running between the Mayacamas Mountains to the east and the Sonoma Mountains to the west. The valley is bordered to the south by San Pablo Bay, which funnels cool air and morning fog northward, moderating summer temperatures and extending the growing season. The Sonoma Mountains block heavy fog from the Petaluma corridor to the west, making Sonoma Valley the driest AVA in Sonoma County, with valley floor rainfall often below 20 inches annually.

Soils across Sonoma Valley span nine distinct soil associations, ranging from volcanic basalt and clay on the higher benchlands to alluvial loam on the valley floor. Denmark St. Vineyard, on the east side of the town of Sonoma, sits on fertile grey loam soils. The valley's AVA encompasses five sub-appellations including Bennett Valley, Moon Mountain District, Sonoma Mountain, and Los Carneros at its southern tip. Sauvignon Blanc, Chardonnay, Cabernet Sauvignon, and Pinot Noir are the most widely planted varieties, though a current generation of producers has shown the valley's suitability for low-intervention, skin-contact white wines.
