Running Syrah and Grenache through carbonic maceration separately before blending with Chenin Blanc is an unusual move for a rosé, and it shows: the wine has a vivid, almost crunchy red-fruit character with brighter acidity than most southern French pinks. Zero sulfites, nothing fined or filtered, and still precise.

The Déferlante line was born out of necessity. When Olivier Cohen's estate vineyards in Argelliers suffered significant losses to mildew in 2018, he began sourcing fruit from trusted organic growers across the Hérault to produce a series of non-vintage, zero-sulfur wines. Déferlante 2 is the rosé in that lineup: a blend of Chenin Blanc, Grenache, and Syrah grown on clay and limestone soils, labeled as Vin de France to allow the flexibility of multi-vintage blending without appellation constraints.

In the cellar, Syrah and Grenache each undergo carbonic maceration separately, then are blended with Chenin Blanc. Fermentation happens spontaneously with indigenous yeasts in stainless steel. The wine is bottled unfined, unfiltered, and with zero added sulfites.

The village of Argelliers sits northwest of Montpellier in a notably cool climatic pocket of the Hérault, where warm Mediterranean days are moderated by cool nights. Vines average 30 to 40 years old and yields are kept around 30 hl/ha. Nearby landmarks include La Grange des Pères and Montcalmes, both within a few kilometers.

Carbonic maceration on the red varieties pulls vivid red-fruit aromatics and keeps tannins minimal, while the Chenin adds structure and a streak of brisk acidity. The result is a pale rosé that drinks light but focused, with no added sulfites and nothing stripped out in the cellar.

Works well alongside grilled whole fish, a platter of raw oysters, or fresh chèvre with herbs. The carbonic-maceration fruit character holds up to lightly spiced dishes like harissa-marinated chicken or a tomato-anchovy salad. Serve well chilled at 48 to 52°F.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Les Vignes D'Olivier

Olivier Cohen grew up in Nice and worked at La Part des Anges, a well-known natural wine bar there, before moving on to Vinivore nearby. Those years in wine retail pushed him toward making wine himself. He pursued hands-on training with Antoine Arena in Corsica, Domaine Valette in the Mâcon, Frédéric Rivaton in Roussillon, and Thierry Allemand in Cornas before establishing his own estate.

Cohen founded Les Vignes d'Olivier in 2013 in Argelliers, acquiring the winery and vines from retiring producer Bernard Boubal. The estate covers approximately 7.5 hectares planted to Syrah, Grenache, Cinsault, Carignan, Merlot, and Cabernet Sauvignon, with vines averaging 30 to 40 years old on clay and limestone soils. Farming is organic and biodynamic. Yields are kept around 30 hl/ha, and all harvesting is done by hand.

The Déferlante series began as a négoçiant project in 2018 after Cohen's estate vineyards suffered major mildew losses. Rather than release nothing that year, he sourced fruit from trusted organic growers in the Hérault and produced a range of non-vintage, zero-sulfur wines. The project continued beyond necessity, driven by Cohen's interest in cross-vintage blending as a vinification tool rather than just a stylistic one. All Déferlante wines are unfined, unfiltered, and bottled with no added sulfites.

Wine region

Languedoc, France

Languedoc stretches across southern France from the Rhône delta to the foothills of the Pyrenees, covering much of the Hérault, Aude, Gard, and Pyrénées-Orientales departments. The region has a Mediterranean climate: long, dry summers with substantial sunshine and mild winters. The interior, where Argelliers sits northwest of Montpellier, is cooler than the coast, with significant day-to-night temperature swings that help preserve acidity in the grapes. Soils vary widely across the region, with clay-limestone dominant in the Hérault interior.

Wines made in and around Argelliers may qualify for the AOP Languedoc, which replaced the old Coteaux du Languedoc designation in 2007, or for the broader Vin de France classification, which carries no geographic restriction and allows blending across vintages. Key sub-appellations near Argelliers include Pic Saint-Loup to the north and the emerging Grès de Montpellier. The region's dominant red varieties are Grenache, Syrah, Carignan, Cinsault, and Mourvèdre; white grapes include Picpoul, Grenache Blanc, Roussanne, and Marsanne. Natural and organic producers have become increasingly prominent in the Hérault over the past two decades.
