Tasting notes

This is Calek at his most serious: 21 days of whole-bunch carbonic maceration followed by 10 months in old Burgundy barrels produces a Syrah with real depth, violet and blackberry fruit, and a peppery, earthy finish. The tannins are fine but present, and the acidity keeps it lively through the last sip.

  • Serving: Serve at 61-64F (16-18C); decant 45-60 minutes
  • Pairing: Lamb shoulder, duck confit, braised beef, aged hard cheese, mushroom dishes
  • Similar To: For fans of northern Rhone Syrah or Beaujolais who want something wilder and unfiltered

Chatons de Garde is Andrea Calek's barrel-aged Syrah from his 5-hectare estate in Alba-la-Romaine, southern Ardeche. The vines are 25 to 55 years old, planted in calcareous clay soils between the villages of Valvigneres and Alba-la-Romaine. The estate is Ecocert certified and farmed without synthetic inputs.

Whole bunches undergo a 21-day carbonic maceration, then the wine is aged in old 228-litre Burgundy barrels that have seen anywhere from 12 to 20 previous uses. This approach extracts texture and fruit without imposing oak character. No sulfites are added at any stage; the wine goes to bottle unfined and unfiltered.

The 2018 is labeled Vin de France, giving Calek flexibility outside the IGP framework. It shows the structured, food-driven side of his range: firm but fine tannins, lively acidity, and a profile that lands somewhere between a northern Rhone Syrah and something wilder and more immediate.

Chatons de Garde translates loosely as 'guardian kittens,' named for the cats that roam the estate. The back label reads 'Deconseille aux chiennes' ('Not recommended for female dogs') a characteristic provocation from Calek.

Lamb shoulder, duck confit, or a slow-braised beef stew are natural partners for the tannin and dark fruit here. Hard aged cheeses and dishes with earthy mushroom components also work well. Decant for at least an hour before serving.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.

Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.

Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.

Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.

Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Andrea Calek

Andrea Calek was born in Czechoslovakia and left the Czech army in 1989 when the Iron Curtain fell. He ended up in France after meeting a woman in Nice while traveling toward Brazil, and his path into wine began through encounters with Beaujolais producers Guy Breton and Marcel Lapierre, whose work drew him toward organic and biodynamic farming. He trained formally at the Agriculture School of Carpentras and at ISARA Lyon, then worked with the Rohel brothers in the Rhone Valley and with Dominique Hauvette in Saint-Remy-de-Provence, where he helped convert the domaine to biodynamics.

In 2007, Calek acquired approximately 5 hectares of vines from Gerard Oustric of Domaine du Mazel, one of the foundational figures in Ardeche natural wine, and established his own estate between the villages of Valvigneres and Alba-la-Romaine. The estate is Ecocert certified. Calek's partner Stephana Nicolescu, a Franco-Romanian sommelier who had worked in vineyards in Spain and the Loir-et-Cher, joined the project in 2016. The estate grows Syrah, Grenache, Merlot, Chardonnay, and Viognier across 5 to 5.5 hectares, with alternating rows left grassed and the others lightly tilled.

Calek uses no additives and adds no sulfites at any stage of production. His approach varies by cuvee: some wines undergo short carbonic macerations for early drinking, while Chatons de Garde involves a 21-day whole-bunch carbonic maceration followed by aging in old 228-litre Burgundy barrels that have been used between 12 and 20 times. All wines are bottled unfined and unfiltered. Calek has been recognized as one of the most skilled practitioners of carbonic maceration outside Beaujolais, though he has increasingly moved toward techniques that foreground fruit and terroir more directly.

Wine region

Ardeche, France

The Ardeche department sits between the Rhone Valley to the east and the Massif Central plateau to the west, roughly 50 kilometers south of Lyon and 100 kilometers north of the Mediterranean. The southern portion of the department, where Calek farms, has a Mediterranean climate with mild winters and hot, dry summers, moderated by altitude and the cooling influence of the Massif Central. Soils across the region range from limestone and clay-marl to sandstone and ancient alluvial terraces, with the area around Alba-la-Romaine sitting on clay-limestone foothills. Archaeological excavations at Alba-la-Romaine have uncovered evidence of viticulture dating to the Iron Age.

Wine production in Ardeche falls under several designations. The IGP Ardeche (formerly Vin de Pays de l'Ardeche) and its sub-designation Coteaux de l'Ardeche cover the majority of the department's output, while AOC appellations including Cotes du Vivarais, Saint-Joseph, Cornas, and Saint-Peray sit within the same geographic boundaries. Cooperatives account for 80 to 95 percent of total IGP production, but a cluster of independent natural winemakers centered around the villages of Valvigneres and Alba-la-Romaine has given the region an outsized reputation in natural wine circles. Syrah and Grenache are the dominant red varieties; Viognier, Chardonnay, Marsanne, and Roussanne are also grown.
