This is a no-sulfur, no-filtration white from a low-profile estate near Lake Trasimeno that has never touched synthetic chemicals in the vineyard. The Malvasia adds dried apricot and citrus blossom to Trebbiano's bright acidity and flinty mineral edge, making for a wine that is lean, textured, and genuinely distinctive for its price point.

Bianco Conestabile is a blend of Trebbiano and Malvasia grown on the estate's 12 hectares of vines outside the village of Montemelino, near Lake Trasimeno in northern Umbria. The vineyards sit at 250 to 300 meters above sea level on clay soils with a limestone base, and have been farmed without synthetic chemicals since Danilo Marcucci took over winemaking in 2015.

The wine is fermented with native yeasts in open-top 500-liter vessels, then aged in stainless steel. No sulfur is added at any stage, and the wine is not filtered or fined. This is a direct, unmanipulated expression of two central Italian white varieties that have grown on the property for decades.

Trebbiano brings high acidity, lemon and green apple character, and structural backbone. Malvasia contributes aromatic lift, with notes of dried apricot, citrus blossom, and hazelnut. Together they produce a dry, medium-light white with a slightly textured finish and a flinty, mineral quality shaped by the calcareous clay soils.

The Conestabile della Staffa estate classifies this wine as Umbria IGT, the region-wide designation that allows Marcucci to work outside strict DOC rules and focus on minimal-intervention methods. Alcohol is 12.5%. No sulfites added.

Pair with simply prepared fish, clam pasta, or antipasti of marinated vegetables and aged pecorino. The bright acidity cuts through olive oil-based dishes cleanly, and the wine's mineral edge complements white-fleshed seafood well. It also works alongside anchovy-dressed salads and fresh cheeses.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Conestabile della Staffa

Conestabile della Staffa is an estate located on the outskirts of Montemelino, in the province of Perugia, Umbria. The property traces its origins to an arranged marriage in the 1700s between the Conestabile family from Orvieto and the Della Staffa family from Perugia. At its peak in the late 1800s, the estate covered over 700 hectares and was one of the most significant producers in the Trasimeno-Perugino area, at times producing over 10,000 hectoliters annually. Production declined after World War II, and the estate fell into disrepair for decades.

Danilo Marcucci, who is married to Alessandra Conestabile della Staffa, took over winemaking in 2015 and began reviving approximately 12 hectares of vines planted in the early 1970s. The land had never been treated with agrochemicals, which simplified the transition to fully natural farming. Marcucci trained under some of Italy's most respected natural wine figures, including Lino Maga, Edoardo Valentini, Cappellano, and Vittorio Mattioli, accumulating more than 20 years of experience before taking on the estate.

In the cellar, Marcucci uses spontaneous fermentation, no temperature control, no fining, no filtration, and adds no sulfur. Fermentation for the Bianco takes place in open-top 500-liter containers, followed by aging in stainless steel. Rackings are carried out in winter during the waning moon. Native grape varieties on the property include Trebbiano, Malvasia, Grechetto, Sangiovese, Ciliegiolo, Canaiolo, Sagrantino, and Gamay del Trasimeno.

Umbria, Italy

Umbria is a landlocked region in central Italy, bordered by Tuscany to the west and Marche to the east. The landscape is predominantly hilly, with vineyards planted along terraced hillsides at elevations between 150 and 600 meters. Lake Trasimeno, the largest lake on the Italian Peninsula, moderates temperatures in the northern part of the region around Perugia, creating a Mediterranean microclimate that supports both white and red varieties. Day-to-night temperature swings at higher elevations help preserve acidity in white grapes.

Umbria holds two DOCGs: Torgiano Rosso Riserva and Montefalco Sagrantino. Its main DOC appellations include Orvieto, Colli del Trasimeno, Colli Perugini, Montefalco, and Torgiano, among others. The Umbria IGT designation covers the entire region and gives producers latitude to work with native varieties like Trebbiano, Grechetto, Malvasia, Sagrantino, and the locally distinctive Gamay del Trasimeno without conforming to specific appellation blending requirements. Soils vary across the region but typically include clay, limestone, sand, and marl.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.
