Tasting notes

Whole-bunch carbonic maceration on all three grapes keeps this at 12% ABV with soft tannins and a juicy red-and-dark-fruit core — black cherry, cassis, and strawberry — finishing with a peppery kick that reads very Syrah. It drinks like a natural southern French red without the weight that usually comes with Grenache-Mourvedre blends from this latitude.

  • Serving: Serve at 58-60F; no decant needed; drink now
  • Pairing: Merguez sausage, roast chicken, aged sheep's cheese, charcuterie, tomato braises
  • Similar To: For fans of carbonic Gamay or lighter Cotes du Rhone who want Roussillon freshness

Anima is a blend of roughly equal parts Grenache Noir, Syrah, and Mourvèdre grown on 1.5 hectares of clay-limestone and schist soils just south of Espira de l'Agly in the Agly Valley of northern Roussillon. The grapes are farmed organically and the wine is bottled as Vin de France. At 12% ABV, it sits on the lighter end of what these three southern varieties can produce.

The wine is made by whole-bunch carbonic maceration without extraction, a technique that pulls red and dark fruit and spice from the grapes while keeping tannins soft and the overall profile fresh. Fermentation is spontaneous with indigenous yeasts. The wine is aged in stainless steel, then bottled unfined and unfiltered with a low dose of sulfur added just before bottling.

The 2018 vintage was significant for Domaine Lampyres: FX Dauré converted a small barn into a proper cellar that year, reducing the volume of fruit sold to the local cooperative and expanding his own bottlings. Anima had been part of the lineup since the inaugural 2016 garage vintage, and 2018 represents the first year it was made in a dedicated winery space.

The low tannins and fresh acidity make this a natural match for charcuterie, grilled lamb merguez, or a board of aged sheep's milk cheese. It also works alongside tomato-based braises and roasted chicken with herbes de Provence. Serve slightly cool, around 58-60F, to keep the fruit lively.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.

Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.

Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.

Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.

Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Domaine Lampyres

François-Xavier Dauré, known as FX, is the fourth generation of the Dauré family to grow grapes in and around Espira de l'Agly. The family's production had long been sold entirely to the local cooperative. Starting in 2008, FX began working with other vignerons across Roussillon to learn winemaking. In 2015 he joined Tom Lubbe at Domaine Matassa, working in both the vineyards and cellar, while simultaneously taking over full control of his family's domaine and beginning its conversion to organic farming.

For five vintages FX worked full-time at Matassa while also farming 16 hectares of his own vines organically. To manage both commitments, he was regularly in his vineyards before dawn using a headlamp. Neighbors joked he looked like a lampyre — firefly in French — and the name stuck for his own project. The inaugural vintage of Domaine Lampyres was 2016, with just 600 bottles of Anima and Luminescence made in his garage. In 2018, FX converted a small barn into a dedicated cellar and began reducing the volume sold to the cooperative. By 2019, his final vintage at Matassa, he was farming 16 hectares entirely under his own label. The domaine has since grown to around 17 hectares.

Farming across the domaine is certified organic. FX also incorporates homeopathic treatments including horsetail and nettle sprays, and has made early forays into biodynamic preparations. The dry, windy climate of the Agly Valley keeps disease pressure low, minimizing the need for even permitted copper and sulfur applications. In the cellar, fermentation is always spontaneous using indigenous yeasts. Wines are bottled unfined and unfiltered, with a low dose of sulfur added shortly before bottling.

Wine region

Roussillon, France

Roussillon occupies the southernmost corner of France, bordered by the Pyrenees to the south and west and the Mediterranean to the east. The region sits within the historic Catalan territory and experiences one of the driest, sunniest climates in France, with the Tramontane wind helping to keep disease pressure low. The Agly Valley runs east-west through the northern part of Roussillon, and the village of Espira de l'Agly sits at its eastern mouth, roughly 20 kilometers from the Mediterranean coast. Soils in and around Espira include a mosaic of schist, clay-limestone (argilo-calcaire), and marl, with very little topsoil across much of the area.

Roussillon's key appellations for dry red wine include Côtes du Roussillon, Côtes du Roussillon Villages, and the single-village designations of Tautavel, Caramany, Latour-de-France, and Lesquerde within the Villages tier. Many natural producers in the region, including Domaine Lampyres, bottle under the broader Vin de France designation to allow greater flexibility in blending and winemaking. The dominant red varieties are Grenache Noir, Syrah, Mourvèdre, Carignan, and Lledoner Pelut. The combination of arid Mediterranean conditions, low copper and sulfur requirements, and diverse soils has made Roussillon a hub for organic and natural wine production over the past two decades.
