This rosé has genuine depth: raspberry, red currant, grapefruit pith, and a peppery finish that comes from Tannat in the blend. The high-altitude limestone soils of the Causse give it a mineral tension you rarely find in a rosé at this price.

A Table!!! is a rosé from Mas del Périé, the estate Fabien Jouves founded in 2006 on the high limestone Causse plateaus above Trespoux-Rassiels, on the edge of the Cahors appellation. The vineyards sit at around 350 meters elevation on clay and limestone soils, farmed biodynamically and certified Demeter since 2011. The blend is Malbec (Côt), Merlot, and Tannat — the same grapes permitted in Cahors AOC reds — declassified to Vin de France because the appellation does not permit rosé.

Winemaking uses both direct pressing of destemmed and whole-cluster grapes and the saignée method, followed by a medium-length skin maceration. Fermentation is spontaneous with native yeasts. The wine ages on the lees for six months in concrete vats and barrels, with no fining, no filtration, and minimal to no added sulfur.

The result is a darker, more structured rosé than most — vivid red fruit, wild herb notes, and a vibrant acidic finish that comes from the altitude and the limestone soils. This is not a pale, neutral summer sipper. It has the depth to hold up on the table with food.

Serves well with meaty fish like swordfish or tuna, grilled chicken thighs, or charcuterie. The acidity and structure also handle dishes with olive oil, herbs, and garlic without getting lost. Works as a table wine through an entire meal rather than just an aperitif.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Fabien Jouves

Fabien Jouves is from an old farming family of the Causse du Quercy and represents the fifth generation of grape growers in the region. He studied oenology and trained in Bordeaux, then in 2006 took over the family vineyards in Trespoux-Rassiels — which had previously sold all their fruit to the local cooperative — to create Mas del Périé. The estate name translates roughly as 'house of stones,' a reference to the limestone terrain.

The estate covers approximately 23 hectares at around 350 meters elevation on the Causse, planted primarily with Malbec (Côt) and Chenin Blanc, alongside old indigenous varieties including Jurançon Noir, Valdiguié, Noual, and Gibert. Soils are a mix of Kimmeridgian limestone, Miocene brown marl, and ferruginous limestone. Jouves obtained organic (AB) certification in 2009 and Demeter biodynamic certification in 2011. He is also a member of Biodyvin and Renaissance des Appellations. His farming integrates viti-forestry — hedgerows, fruit trees, and livestock including pigs — as a practical adaptation to climate change and a means of maintaining soil health.

Vinification at Mas del Périé is entirely without oenological additions. Fermentations are spontaneous with native yeasts. Aging takes place in a combination of concrete vats, old oak barrels, large foudres, and amphorae, each vessel chosen according to the character of the wine. There is no fining and minimal or no filtration. The A Table!!! rosé uses both direct pressing and the saignée method, undergoes a medium-length skin maceration, and ages on the lees for six months in concrete and barrels before bottling with minimal to no added sulfur.

Cahors, France

Cahors is a red wine appellation in the Lot department of southwest France, roughly 160 kilometers east of Bordeaux in the foothills of the Massif Central. The Lot River meanders for over 40 kilometers through the zone, creating alluvial terraces and shaping the landscape into distinct soil types. Vineyards are divided broadly between the lower river terraces — gravel and sandy alluvial soils — and the high limestone plateau known as the Causse, which reaches up to 400 meters above sea level. The climate draws from both Atlantic and Mediterranean influences: summers are hot and sunny, winters are damp with frost risk at elevation, and rainfall is lower than in Bordeaux, reducing disease pressure in the vineyards.

Cahors AOC is exclusively red wine, produced from a minimum of 70% Malbec (locally called Côt or Auxerrois), blended with up to 30% Merlot and/or Tannat. Because the AOC does not permit rosé or white wine, producers making those styles in the same area must label them Vin de France. Cahors received its AOC designation in 1971, following a slow rebuilding of the region after phylloxera destroyed most of its vineyards in the late 19th century and a catastrophic frost in 1956 finished what remained. The Causse plateau, with its Kimmeridgian and Miocene limestone soils, is considered the most distinctive terroir for producers seeking freshness and tension in their Malbec-based wines.
