At 10.5% ABV, this is a rare skin-contact wine that stays genuinely light on its feet: tropical fruit, grapefruit rind, and a honeyed note from the Chenin, without the oxidative weight that heavier orange wines carry. The whole-cluster Semillon adds a stemmy, saline lift that keeps the finish dry and moreish.

The 1000 Fires is a skin-contact white wine from James Erskine's Jauma label, sourced from organically farmed vineyards in McLaren Vale and Clarendon, South Australia. The 2021 vintage is a blend of Semillon and Chenin Blanc, with vines on some sites dating back to the 1940s and farmed by viticulturalist Fiona Wood under NASAA-certified organic practices.

In the cellar, the Semillon is fermented whole cluster while the Chenin Blanc is fermented on its skins in neutral barrel. Nothing is added or removed: no sulfur, no fining agents, no filtration. The wine is sealed under crown cap.

The result sits on the lighter end of the orange wine spectrum. At around 10.5% ABV, it is low-alcohol and very dry, with tropical fruit character, citrus brightness, and the gentle grip you get from the Chenin skin contact. The texture is present but not dominant.

Jauma produces all wines without additions of any kind, a practice James Erskine has maintained since 2015. The wines are assessed annually by NASAA, Australia's certifying body for organic farming.

Works well with dishes that have a citrus or herb element: grilled white fish with salsa verde, Vietnamese spring rolls, or a platter of soft-rind cheeses. The low alcohol and dry finish also make it a good match for lightly spiced food where heavier wines would overwhelm.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Jauma

James Erskine founded Jauma in 2010, with a first vintage of McLaren Vale Grenache. Before making wine, he built a career as a sommelier, winning the Australian Gourmet Traveller Sommelier of the Year award in 2008 and placing at the top of the Australian International Court of Master Sommeliers exams that same year. He also holds an honours degree in Agricultural Science with study at both the University of Adelaide and UC Davis. Prior to launching Jauma, he was a founding member of Natural Selection Theory alongside Tom Shobbrook, Anton van Klopper, and the late Sam Hughes, a collective that helped establish natural winemaking as a serious movement in Australia.

Jauma sources fruit from organically farmed vineyards across McLaren Vale and Clarendon, with long-term grower relationships including Fiona Wood and Lulu Lunn, among others. Some Chenin Blanc vines in Blewitt Springs date to 1940. The vineyards are managed with the stated goal of preserving the sites for 100 years or more, using biological farming approaches including aerated compost teas informed by Soil Food Web methodology. The Lenswood farm, where the winery is based, has been NASAA-certified organic since 2009. The McLaren Vale vineyard sites are assessed annually for organic certification.

In the winery, Erskine makes no additions and performs no subtractions: no sulfur (a practice held since 2015), no added yeasts, no fining agents, no filtration. Fermentation is spontaneous. Vessels used across the range include neutral barrel, stainless steel, clay amphora, and fibreglass, depending on the wine. All wines are sealed under crown cap. The 1000 Fires is made by fermenting the Semillon whole cluster and the Chenin Blanc on its skins in neutral barrel, then blending and bottling without any further intervention.

McLaren Vale, Australia

McLaren Vale is a GI wine region on the Fleurieu Peninsula, located roughly 40 kilometres south of Adelaide along the South Australian coast. It is bounded by the Gulf of St. Vincent to the west and the Mt. Lofty Ranges to the east and south. The GI covers 433 square kilometres and contains approximately 7,438 hectares of vineyards. Elevation across the region runs from 50 to 350 metres, with the majority of vineyards on rolling foothills between 50 and 250 metres.

The climate is Mediterranean: warm, dry summers with rainfall concentrated in winter. Two distinct wind systems moderate the growing season: gully winds running east-west through the foothills, and sea breezes moving south-north off the Gulf of St. Vincent. The region has over 40 distinct soil types, ranging from deep white sands and red-brown sandy loams to clay, schist, and quartzite. The inland subregion of Clarendon, at higher elevation, functions more like the Adelaide Hills in temperature and is a source for some of Jauma's white grape fruit. Key varieties in McLaren Vale are Shiraz, Grenache, and Cabernet Sauvignon, though producers like Jauma have long worked with Chenin Blanc and other white varieties on organically farmed sites.
