Papras Bio Wines

Papras Bio Wines is operated by the Papras family of Tyrnavos. Stergios Papras, the family's oenologist, served as president and oenologist of the local cooperative from 1979 until recently, where he championed the indigenous grape varieties of the area, particularly Black Muscat of Tyrnavos, and raised the profile of Tyrnavos tsipouro. His brother Thomas and his son personally manage the vineyards.

The Papras family vineyards have held certified organic status since 1990, the first year organic certification was available in Greece. Farming uses only sulfur and copper to address vine disease pressure. Vineyards are irrigated sparingly, roughly three times per year, weeds are cut under the vines for airflow, and soils are not tilled. The vineyards are flat, surrounded by neighboring orchards and fruit trees, and sit in one of the hottest valley floors in Greece.

Stergios Papras produces unfiltered, skin-fermented wines in a utilitarian cellar with no concessions to aesthetics. The focus is on indigenous varieties fermented with native yeasts at ambient temperatures in stainless steel, with old oak used sparingly for finishing. Sulfites are added only at bottling in minimal quantities. The Naiads Badiki is one of the few wines in the portfolio focused on the Badiki variety rather than the signature Black Muscat.
