Tout Sauf L'Ennui translates to 'anything but boring' and is 100% Carignan sourced from Nizas in the Hérault department of Languedoc. The wine is classified as Vin de France, as single-varietal Carignan falls outside the blending rules of the region's AOC appellations. Grapes are grown on limestone subsoils, which help retain freshness in this warm, dry Mediterranean climate.

In the cellar, Edouard Adam works with native yeasts, includes stems in the fermentation, and adds no sulfur. Since 2019, all Domaine Mada wines are barrel aged with minimal topping and bottled without fining or filtration. The result is a wine with a lively, slightly wild character — juicy red fruit, herbal lift, and a brisk, bracing acidity that keeps things light on their feet.

Carignan has a complicated reputation in Languedoc. Once planted for volume, it is now being rediscovered through low-yield, old-vine selections where limestone and schist soils bring out its mineral edge and natural acidity. In Adam's hands, it is made for early drinking: soft, fluid, and direct, with enough grip and freshness to hold interest across a meal.

Pour this alongside grilled lamb chops, a simple charcuterie spread, or a plate of aged sheep's milk cheese. Its acidity and herbal notes also make it a natural match for tomato-based dishes like ratatouille or pasta with a slow-cooked red sauce.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Domaine Mada

Domaine Mada was founded in 2016 by Edouard Adam, a Tunisian-born winemaker based near Gignac in the Hérault. Adam originally studied commerce in Montpellier before leaving to help with harvest at his girlfriend's family's property in Languedoc, where he found an interest in winemaking and went on to study oenology. His father-in-law subsequently gifted him the small vineyard that became the foundation of Domaine Mada. The name is a palindrome of his surname, Adam. He works alongside Pauline Bousquet.

Adam farms without synthetic chemicals, prioritizing the natural flora and fauna within the vineyard. Vines are grown on limestone subsoils, which he relies on to maintain freshness in Languedoc's warm growing conditions. He works with local varieties including Carignan, Cinsault, Grenache, Clairette Blanche, Syrah, and Terret, sourcing fruit from his own plots near Gignac as well as purchased fruit from local organic growers.

In the cellar, Adam uses native yeasts, keeps stems in with the grapes during fermentation, and adds no sulfur. Since 2019, all wines from Domaine Mada are barrel aged with minimal topping and see no fining or filtration. The goal, in his own words, is wine that is light, fruit-forward, and digestible while retaining a distinctly southern character.

Languedoc-Roussillon, France

Languedoc-Roussillon spans the Mediterranean coastline of southern France from the Spanish border east toward Provence, covering roughly 300,000 hectares and producing more than a third of all French wine. The climate is warm and dry with a classically Mediterranean character: hot summers, mild winters, and strong winds — particularly the Tramontane — that reduce disease pressure and support organic viticulture. Soils vary considerably across the region, from clay and limestone on the plains to schist, granite, and sandstone in the mountain foothills. The Hérault department, where Domaine Mada operates near Gignac and Nizas, sits on predominantly calcareous limestone subsoils that help preserve acidity even in warm vintages.

Languedoc accounts for approximately 36% of all French organic wine production, the highest share of any French region. Its AOC hierarchy includes well-known appellations such as Pic Saint-Loup, Faugères, Saint-Chinian, Minervois, Corbières, and Terrasses du Larzac. The primary red grapes are Grenache, Syrah, Mourvèdre, Carignan, and Cinsault. Single-varietal Carignan does not qualify for most AOC designations and is typically sold as Vin de France or IGP. Carignan was historically planted for bulk production but is increasingly celebrated as an old-vine variety capable of producing intensely mineral, high-acid reds in the right hands.

Signature on delivery is mandatory for wine deliveries. Please make sure someone is at the shipping address to sign for the package.

If applicable, please consider delivering the package to a business address to ensure someone is available to sign for the package.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
