The methode untraditionelle approach, stopping primary fermentation to capture the grape's own residual sugar for the bottle refermentation, means no added dosage and no compromise on balance. Old-vine Carignan from Redwood Valley's gravelly loam delivers a copper-hued sparkling wine with green strawberry, toasted hazelnuts, and a lime-crisp finish at only 11.8% ABV.

Las Jaras Sparkling Wine is made from 100% certified organic, old-vine Carignan grown at Ricetti Vineyard in Redwood Valley, at the cool northern end of the Ukiah Valley in Mendocino County. The vines are dry-farmed on gravelly loam soils and have been tended by Pamela and Tom Ricetti, whose family planted the vineyard. Grapes were hand-picked and whole-cluster pressed directly to stainless steel tank.

The wine is made using what Las Jaras calls the methode untraditionelle: primary fermentation is stopped with enough residual sugar remaining so that no additional sugar is needed to trigger the secondary bottle fermentation. The result is a sparkling wine built entirely from the grape's own sugars, with no dosage or added must.

In the glass, the wine shows a copper hue. The nose offers green strawberry, hay, toasted hazelnuts, and marshmallow. On the palate, apricot and comice pear are framed by a fine texture with cocoa in the background and a long finish defined by crisp, lime-like acidity. At 11.8% ABV, it sits light on its feet without sacrificing complexity.

Serve with oysters, cured fish, or a simple herb-roasted chicken where the wine's acidity can cut through fat without overwhelming the dish. The cocoa and hazelnut notes on the palate make it a natural match for aged cheeses. Works equally well as an aperitif alongside charcuterie.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Las Jaras

Las Jaras was founded in 2015 by winemaker Joel Burt and actor-comedian Eric Wareheim. Burt grew up in a California farming family, studied enology at Fresno State, and spent his early career working with Alice Bouvot of Domaine l'Octavin and Aaron Pott of Pott Wine before launching Las Jaras as a departure from corporate winemaking. Wareheim, a longtime natural wine collector, handles creative direction and marketing. The winery produces and bottles in Sonoma County.

Las Jaras sources exclusively from vineyards farmed organically or with practicing-organic methods across Mendocino and Sonoma counties, as well as Oregon for Pinot Noir. The Ricetti Vineyard in Redwood Valley, the sole source for this sparkling wine, is certified organic and dry-farmed by Pamela and Tom Ricetti on gravelly loam soils. For this wine, grapes are hand-picked and whole-cluster pressed directly to stainless steel.

The winery's approach across all wines is spontaneous fermentation using native yeasts, no fining, and low or no sulfur additions, with light filtration only when necessary. For the sparkling wine, the methode untraditionelle halts primary fermentation before dryness, preserving enough residual sugar to fuel a secondary fermentation in bottle without any addition of sugar or must. The label art is by artist Jen Stark.

Mendocino, USA

Mendocino County sits approximately 130 miles north of San Francisco within the North Coast AVA and hosts thirteen nested sub-appellations spanning cool coastal valleys and warm inland corridors. The Mendocino Range divides the county into two distinct climate zones: the western side, including Anderson Valley, receives strong Pacific maritime influence, while the inland valleys around Ukiah run warmer and more Mediterranean. Redwood Valley is an upland valley within that inland zone, yet its climate is cooler than neighboring Ukiah Valley because a gap in the coastal ridge allows Pacific air currents to penetrate. That cooling effect extends the growing season and produces wines with higher natural acidity and later maturity than fruit sourced from the valley floor.

Redwood Valley AVA earned its designation based on those measurable climatic and soil differences. Soils on the valley's bench terraces, including the Ricetti Bench, are gravelly loam with distinctive red clay subsoil, well-drained and low in fertility, which pushes old vines to produce small, concentrated fruit. Mendocino County is recognized as a leader in organic viticulture nationally, with roughly 25% of planted acreage certified organic. Carignan is well-suited to the warmer inland sites of Mendocino, where the heat helps round its naturally high tannins while cool nights preserve the variety's characteristic acidity.

Signature on delivery is mandatory for wine deliveries. Please make sure someone is at the shipping address to sign for the package.

If applicable, please consider delivering the package to a business address to ensure someone is available to sign for the package.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
