Tasting notes

This pét-nat sits in a category of its own: the ancestral-method refermentation gives it persistent, creamy bubbles and a slightly hazy salmon color, while Barbera's naturally cutting acidity keeps everything precise and refreshing. The savory, almost umami edge on the finish is what separates it from simple easy-drinking fizz.

Le Bolle di Fognano is a pétillant naturel rosato made from 100% Barbera grown on the Foppiani family estate in the locality of Fognano, near Bobbio, in the Val Trebbia valley of the Colli Piacentini, Emilia-Romagna. The vineyards sit at 300 to 400 meters elevation on calcareous soils and are certified organic by ICEA. Winemaking is overseen by Giulio Armani of La Stoppa and Denavolo, who serves as enological consultant to Paolo Foppiani.

The wine is made via the ancestral method: Barbera undergoes a short skin maceration, then rests for approximately six months in stainless steel. In spring, the wine is refermented in bottle using its own grape must. The result is a lightly sparkling rosato with fine, creamy bubbles and no disgorgement. It is unfiltered and bottled with zero added sulfites.

In the glass it pours a pale salmon-pink with a slight haze from the lees. The nose is fresh and direct: red cherries, wild strawberry, and a faint earthy note underneath. On the palate, Barbera's naturally high acidity drives the structure, keeping the wine bright and lively, with a subtle savory finish that makes it unusually versatile at the table.

Filed under Emilia IGT. Serve well chilled, around 45 to 48F, and expect some sediment from the unfiltered, in-bottle refermentation.

The wine's high acidity and light body make it a natural match for cured meats, salumi boards, and aged Parmigiano Reggiano. It works well alongside dishes with a savory or fatty element that needs cutting through: fried anchovies, fritto misto, or tagliatelle with butter and sage. Serve well chilled as an aperitivo or keep it going through a light first course.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.

Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.

Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.

Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.

Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Agricola Foppiani

Fognano is the family estate of Paolo Foppiani, located in the locality of Fognano near Bobbio in the Val Trebbia, Colli Piacentini. The Foppiani family has farmed the land for approximately 150 years. The total property spans 110 hectares, with between 3 and 7 hectares under vine at elevations of 300 to 400 meters above sea level on calcareous soils. The estate is certified organic by ICEA, one of Italy's principal organic certification bodies.

Paolo Foppiani works in close collaboration with Giulio Armani, the winemaker at La Stoppa since 1980 and founder of Denavolo in 2005, who serves as enological consultant at Fognano. Grape varieties planted include Barbera, Bonarda (Croatina), Dolcetto, Malvasia di Candia Aromatica, Ortrugo, and Sauvignon Blanc. Annual production across the estate's full portfolio is approximately 12,000 bottles.

All wines at Fognano are hand-harvested, spontaneously fermented with indigenous yeasts, unfiltered, and bottled with zero added sulfites. No commercial yeasts, enzymes, temperature control, fining agents, or other enological additives are used. Le Bolle di Fognano undergoes a brief skin maceration before aging in stainless steel and completing its fermentation in bottle via the ancestral method, refermented in spring with its own grape must.

Wine region

Emilia-Romagna, Italy

Emilia-Romagna stretches across northern Italy from the Apennine foothills in the west to the Adriatic coast in the east. The western sub-zone, Emilia, is dominated by the valleys of the Apennines, including the Val Trebbia in the Province of Piacenza, where the geology is predominantly calcareous limestone and clay. The climate here is continental, with warm summers and cold winters; the elevation of the hillside vineyards introduces cool nights that preserve natural acidity in the grapes.

The Colli Piacentini DOC, established in 1967, covers the hilly terrain of Piacenza province and includes four sub-zones: Monterosso Val d'Arda, Trebbianino Val Trebbia, Val Nure, and Vigoleno. The Val Trebbia sub-zone is home to indigenous white grapes such as Ortrugo and Malvasia di Candia Aromatica, and red varieties including Barbera and Croatina (locally called Bonarda), which together define the area's classic Gutturnio blends. Many natural producers in this zone, including Fognano, label their wines as Emilia IGT to preserve freedom in winemaking outside DOC requirements.
