Tasting notes

Grignolino is rarely seen as a pet nat, and the grape's naturally high acidity and peppery tannins make it unexpectedly well-suited to the format. The result is dry, frisky, and genuinely refreshing, with red currant and wild strawberry balanced by a herbaceous bite that keeps it from being simple.

La Grinozza is a pétillant naturel made from 100% Grignolino grown in the western Langhe hills near Carrù, in the Cuneo province of Piedmont. Grignolino is a thin-skinned indigenous variety known for its high natural acidity, light color, and distinctly peppery, floral character. It is hand-harvested into small bins, undergoes spontaneous fermentation on skins for 5 to 8 days, and is bottled before fermentation completes so it finishes in the bottle. The wine is racked three times over three days prior to bottling. No sulfur is added and the wine is not disgorged, fined, or filtered. Sealed with a crown cap.

In the glass, La Grinozza is a pale ruby with a gentle, persistent mousse. The nose leads with red currant, wild strawberry, and fresh cherry, with a faint peppery lift and earthy undertones typical of the Grignolino grape. On the palate it is light-bodied, lively, and dry, with refreshing acidity and fine, integrated tannins. It comes in a 1-liter bottle.

Poderi Cellario bottles this wine with no added sulfites. Because the wine is undisgorged and continues to evolve in bottle, some sediment and variation between bottles is normal. Serve cold, around 45°F, and invert the bottle gently before opening to distribute the lees.

Serve with cured meats, especially salumi piemontesi like salame di turgia or coppa. It works well alongside fresh cheeses, fritto misto, or bagna cauda. The peppery acidity also cuts through fried foods without overpowering them.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.

Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.

Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.

Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.

Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Poderi Cellario

Fausto and Cinzia Cellario are third-generation winemakers based in the village of Carrù on the western edge of the Langhe. Fausto and Cinzia are the first generation in the family to make strictly natural wines. Their holdings amount to approximately 30 hectares across five sites in the southern Langhe, of which around 13 hectares are under vine; the remainder is hazelnut groves and woodland. Key sites include plots in Novello, Monforte, and Dogliani.

Vineyard farming is organic, with some sources noting biodynamic practices on certain plots. The estate works exclusively with indigenous Piedmontese grape varieties including Dolcetto, Barbera, Nebbiolo, Grignolino, Nascetta, Favorita, Freisa, and Arneis. Sulfur is absent or added only in small quantities at bottling when necessary. All fermentations use indigenous yeasts. Wines are not fined and not filtered.

Pet nats at Poderi Cellario are a tribute to Cinzia's father, known as Baffone, who produced sparkling wines in the old natural way and passed the technique to the family. The ancestral method used for La Grinozza involves primary fermentation in stainless steel, racking three times over three days, then bottling before fermentation finishes so the wine completes its second fermentation in bottle. No disgorgement takes place. The wines are sealed with crown caps.

Wine region

Piedmont, Italy

The Langhe is a hilly subregion south and east of the Tanaro river in the Cuneo and Asti provinces of Piedmont, in northwestern Italy. Vineyards sit on rolling hills at elevations generally ranging from 200 to 600 meters above sea level. The soils are predominantly clay, limestone, and marl, with the clay-chalk mix of the western Langhe contributing structure and mineral tension to red wines. The continental climate brings cold winters, hot summers, and significant diurnal temperature variation, which preserves acidity in the grapes.

Carrù sits on the western outskirts of the Langhe in Cuneo province, on terrain that borders the Alta Langa and the Tanaro river basin. The area falls within the broader Langhe DOC designation and adjacent Dogliani DOCG zone. The Langhe's key red grapes include Nebbiolo, Barbera, Dolcetto, Freisa, and the increasingly rare Grignolino. In 2014, part of the Langhe landscape was inscribed on UNESCO's World Heritage List for its living winegrowing traditions.
