Few California pét-nats deliver this level of tension: grapefruit pith, green apple, and a cidery yeastiness held together by piercing acidity at just 12% ABV. The undisgorged sediment adds a creamy texture to the fine, persistent bead that a disgorged sparkling wine simply cannot replicate.

Cobolorum is 100% Riesling grown at Kick On Ranch Vineyard, located a few miles west of Los Alamos in Santa Barbara County, close to Vandenberg Air Force Base. The vineyard was originally planted in 1991 and expanded to 108 acres in 2007. Its marine-based sandy loam soils rest above deep gravelly alluvial deposits, and the site is one of the coldest and windiest in the county, funneling Pacific fog and ocean air directly onto the vines.

This is a pétillant naturel made by méthode ancestrale: the wine is bottled before primary fermentation completes, capturing its own CO2 in the bottle. It is undisgorged, unfined, unfiltered, and made with no added sulfites. Expect a small amount of yeast sediment and a persistent, lively bead. Production was approximately 260 cases.

The name Cobolorum comes from the Latin for goblin, J. Brix's affectionate nickname for the Kick On Ranch Riesling vines. The wine drinks at 12% ABV and sits in slightly off-dry territory, with bright grapefruit, green apple, and cidery yeast character. Refrigerate upright overnight before opening to let sediment settle.

J. Brix began sourcing Riesling from Kick On Ranch in 2010 after tasting a bottling by Adam Tolmach of The Ojai Vineyard. This pet nat has earned recognition including a top ranking in a New York Times tasting panel led by Eric Asimov in 2018.

The bright acidity and slight residual sweetness make this a natural match for spicy Thai or Vietnamese dishes, where the wine's citrus and apple notes cut through heat. It also works well with fresh oysters, sushi, or a simple plate of aged gouda and salted crackers. Drink it cold and fresh.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

J. Brix Wines

Emily Towe and Jody Brix Towe founded J. Brix Wines in 2009 with three barrels made in their two-car garage in San Diego. They got their start as volunteer harvest interns in the Santa Maria Valley in 2007, where a bottle of local Pinot Noir led them to pursue winemaking. The winery has since grown to a production facility in Escondido, California, and the couple opened their first public tasting room in San Marcos in 2024. They remain the core of the operation, with no outside winemaking staff.

J. Brix sources fruit from multiple California counties, including Santa Barbara, San Luis Obispo, Calaveras, and San Diego. All vineyards the winery works with are farmed without synthetic inputs; some are certified organic and others are practicing organically. Jody Brix Towe's background in horticulture shapes his approach to understanding vine physiology and the way each growing season affects fruit character.

All J. Brix wines are fermented with native yeasts in neutral vessels, primarily older French oak barrels. The winery does not fine, filter, or cold-stabilize any of its wines. Sulfur dioxide is used only when considered necessary. The Cobolorum pét-nat is bottled before primary fermentation completes, using méthode ancestrale, and is released undisgorged with no added sulfites and no added dosage.

Santa Barbara County sits at roughly 34.5 degrees north latitude and is defined by its east-west transverse mountain ranges, a geographic anomaly on the Pacific coast that channels cold ocean fog and maritime air directly inland through the valleys. This creates one of the longest growing seasons in California, with cool mornings, fog burn-off by mid-morning, afternoon winds, and significant diurnal temperature swings. The county holds seven federally recognized AVAs: Santa Maria Valley, Santa Ynez Valley, Sta. Rita Hills, Ballard Canyon, Los Olivos District, Happy Canyon of Santa Barbara, and the newest, Alisos Canyon.

The Los Alamos Valley, situated between the Santa Maria Valley to the north and the Santa Ynez Valley to the south, does not yet hold its own AVA status but is one of the county's most distinctive growing areas. Its western edge near Highway 135 and Vandenberg Air Force Base is among the coldest, windiest, and foggiest zones in the county. Kick On Ranch sits in this western pocket, and the site has earned particular recognition for Riesling, a variety that thrives in the sandy loam soils over gravelly alluvial deposits and in the cool, fog-moderated climate. Soils across the broader county range from sandy loam and eolian sand to diatomaceous earth, limestone, and chert.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
