Domaine du Possible

Domaine du Possible, a natural winery nestled in the Roussillon region of southern France, was brought to life in 2003 by Loïc Roure. Situated in the Fenouillèdes area, it boasts a captivating array of terroirs, each influenced by the Mediterranean and mountainous climates. With a background in enology and gastronomy, Roure chose to delve into winemaking, focusing on techniques that allow the land's authenticity to shine through. Domaine du Possible is well-known for its commitment to organic and biodynamic farming, producing wines with minimal intervention. They use native yeasts for fermentation and avoid fining, filtering, and adding sulfites. The estate works with several grape varieties, including Carignan, Syrah, Grenache, and Macabeu, crafting red and white wines. One of their standout red wines, C'est Pas La Mer à Boire, a blend of Carignan and Syrah, showcases the region's fresh and fruity characteristics while maintaining complexity through natural winemaking practices. Domaine du Possible's wines, such as Le Fruit du Hasard and Charivari, are celebrated for their lively acidity, vibrant fruit profiles, and earthy undertones.
