Stratos Maceration is a skin-contact white wine from Jean-Marc Dreyer, blending Riesling, Auxerrois, and Sylvaner from the 25 parcels surrounding Rosheim in the Bas-Rhin. The grapes are farmed biodynamically on predominantly clay-limestone soils and harvested by hand. Maceration on the skins follows whole-bunch handling before transfer to large oak foudres for fermentation and aging on lees. No sulfur, fining, or filtration at any stage.

The blend draws on three distinct Alsatian varieties: Riesling contributes tension and citrus-driven acidity; Auxerrois adds body and a floral, spiced character; Sylvaner brings freshness and quince-like roundness. Together, the skin contact softens the angular edges of each grape and binds them into a textured, dry orange wine with notable freshness and light tannin grip.

Dreyer converted the family estate to biodynamic farming in 2003, certified organic (AB label), and stopped adding sulfur to any wine following a pilgrimage to Santiago de Compostela in 2009. The Stratos cuvee sits alongside his single-varietal Origin maceration wines as a blended expression of the same approach — whole bunches, indigenous yeasts, no additions, zero filtration.

The dry, textured, saline character here works well with Alsatian classics: munster cheese, choucroute garnie, or smoked trout. It also holds up well against Asian-inflected dishes — miso-glazed fish, pork dumplings with vinegar dipping sauce, or a Thai green curry where most white wines fall apart.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Jean-Marc Dreyer

Jean-Marc Dreyer is based in Rosheim, a town in the Bas-Rhin roughly 25 kilometers southwest of Strasbourg. The estate dates to 1830, originally a mixed-crop farm managed by his family. Dreyer took over from his father Gerard around 2003-2004 and immediately converted to biodynamic farming, receiving full certification by 2014. The domaine covers six hectares across 25 parcels scattered across the hillsides around Rosheim, planted with Auxerrois, Sylvaner, Riesling, Gewurztraminer, Pinot Gris, Muscat, and Pinot Noir.

Dreyer trained under Patrick Meyer, one of the early figures of natural wine in Alsace, and studied at the wine school in Obernai. His network of peers includes Patrick Bouju in the Auvergne, Jean-Louis Pinto near Limoux, and Raphael Beysang in Beaujolais. In 2009, following a pilgrimage to Santiago de Compostela, Dreyer decided to stop adding sulfur to any wine. The soils across his parcels are predominantly clay-limestone, and part of the domaine is worked by horse.

Dreyer's maceration wines undergo whole-bunch skin contact for 10 to 20 days depending on the variety and condition of the fruit at harvest, often carried out in open containers outside the cellar before transfer to large oak foudres (1,000 to 3,000 liters). Fermentation proceeds with indigenous yeasts. The wines are aged on lees in foudres and demi-muids for approximately 10 to 11 months. Nothing is added at any stage — no sulfur in the vineyard or cellar — and all wines are bottled unfined and unfiltered.

Alsace runs along the eastern slopes of the Vosges Mountains in northeastern France, stretching roughly 170 kilometers from Marlenheim in the north to Thann in the south. The Vosges create a pronounced rain shadow that makes Alsace one of the driest wine regions in France, with approximately 500mm of annual rainfall in many vineyard areas and long, sunny growing seasons. The climate is semi-continental, with warm summers and cold winters.

The region produces wine under three main appellations: Alsace AOC, Alsace Grand Cru AOC, and Cremant d'Alsace AOC. Alsace Grand Cru designates 51 classified vineyard sites focused on four noble varieties — Riesling, Pinot Gris, Muscat, and Gewurztraminer. The soils around Rosheim in the Bas-Rhin are predominantly clay-limestone, with the hillsides offering varied exposures across the 25 parcels Dreyer farms. Alsace is also notable for labeling wines by grape variety rather than by appellation, a practice more common in Germany than in the rest of France.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
