Tasting notes

This is a pét-nat that tastes like it was made for a warm afternoon — dry, with a delicate fizz, fresh wild strawberry and cherry fruit, and a saline finish that keeps it honest. Tai Rosso, the signature red grape of the Colli Berici, gives the wine a faint blush color and a subtle texture that makes it more interesting than most rosé pét-nats at this price point.

Sgass Pét-Nat Rosé is made from Tai Rosso, the indigenous red grape of the Colli Berici hills south of Vicenza. In the pét-nat method, fermentation begins in tank and is completed inside the sealed bottle, leaving a gentle fizz and a small amount of residual yeast sediment. The wine is unfined and unfiltered, with SO2 additions kept below 35 mg/l when used at all.

The grapes come from Sauro Maule's estate, Azienda Agricola Il Cavallino, in San Germano dei Berici. Vines are grown on the limestone and red clay soils typical of the Colli Berici DOC, trained to guyot after the old pergola rows were removed. No herbicides, pesticides, or synthetic fertilizers are used. Vineyard treatments are limited to copper and sulfur. Cover crops are mown in spring and returned to the soil as organic matter.

On the palate the wine is dry, lightly sparkling, and driven by bright red fruit — wild strawberry and fresh cherry — with a saline edge and lively acidity. The light skin contact from Tai Rosso gives the wine its pale salmon color and a subtle grip.

Sauro Maule began making wine in 2011, initially in the cellar of natural wine pioneer Angiolino Maule of La Biancara, a founding member of the VinNatur association. He opened his own winery at the family property in 2017, converting a former cattle shed into a cellar.

Serve well-chilled alongside charcuterie, fresh ricotta on bruschetta, or lightly dressed seafood salads. The saline acidity works particularly well with briny foods like marinated anchovies or clams. It also holds up to soft fresh cheeses like stracchino or crescenza.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.

Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.

Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.

Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.

Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Sauro Maule

Azienda Agricola Il Cavallino is located in San Germano dei Berici in the Colli Berici hills near Vicenza. The farm was originally established by Sauro's father, Lino Maule, as a cattle breeding operation. In 2010, Sauro Maule took over the property and redirected it toward viticulture, purchasing additional family land in Selva di Montebello Vicentino and later acquiring a parcel of old-vine Garganega in Gambellara in 2015. The estate covers approximately 5 hectares of vines.

Sauro replanted the existing pergola-trained vineyards using the guyot training system, which improves oxygenation around the canopy and reduces pressure for fungicide treatments. Vineyard management is organic: no herbicides, pesticides, or synthetic fertilizers are applied. Cover crops are grown between rows and mown in spring to return organic matter to the soil. Treatments are limited to copper and sulfur. The red wine vineyards sit on the limestone and clay soils of the Colli Berici, while the white wine parcels near Gambellara are on predominantly volcanic basalt.

Sauro made his first wines in 2011 in the cellar of Angiolino Maule of La Biancara, the founder of VinNatur, who guided his early winemaking. He continued to use that cellar through the 2016 harvest while converting one of the old cattle sheds at the family property into a dedicated winery, which became operational in 2017. In the cellar, no synthetic additives are used. Sulfur dioxide is added only when Sauro considers it necessary, and total SO2 in finished wines never exceeds 35 mg/l. All wines are bottled unfined and unfiltered.

Wine region

Veneto, Italy

The Colli Berici is a DOC appellation covering roughly 165 square kilometers of central Veneto, just south of Vicenza, midway between Padova and Verona. The hills rise from the alluvial plain to elevations of 300 to 400 meters, with some vineyard sites reaching 500 meters. The geology reflects an ancient seabed: soils are predominantly marly limestone and calcareous conglomerates, with significant red clay and pockets of basaltic volcanic rock. South-facing slopes with good drainage and a mesoclimate measurably milder than the surrounding lowlands define the best sites. The DOC was established in 1973.

The appellation permits a wide range of red, white, and rosé styles, as well as a spumante. The dominant red grape is Tai Rosso, a variety closely related to Grenache and Garnacha, which produces wines with red cherry and raspberry fruit, floral lift, and a gentle spice character on the limestone and clay soils of the Berici hills. Neighboring Gambellara, just to the northwest, is the source of Garganega and Durella grown on volcanic basalt soils — the basis for Sauro Maule's white Sgass pét-nat. The Colli Berici remains relatively little-known outside Italy despite its distinct terroir and growing number of quality-focused producers.
