The overnight co-maceration of Sauvignon Blanc and Merlot before pressing gives this pét-nat an unusual pink hue and a slightly fleshy, textured mouthfeel you don't find in most sparkling rosés. The touch of residual sugar balances a bright, zesty acidity from Hopland's warm-days, cool-nights growing conditions.

Let's Get Fizzical Rosé 2019 is a pét-nat from Brent Mayeaux of Stagiaire Wine. The fruit comes from Feliz Creek, just west of Hopland in Mendocino County, and the two grapes — Sauvignon Blanc and Merlot — were picked on the same day, foot-stomped together, and left to soak overnight before pressing. The wine was disgorged in mid-February and carries a touch of residual sugar.

No sulfur was added at any stage. No other interventions. This is a zero-zero wine in the truest sense: native yeast fermentation, nothing added, nothing removed. The co-maceration of a white and a red grape — pressed together after the overnight soak — gives the wine its pink color and its texture, somewhere between a proper rosé and a skin-contact white.

Hopland sits in the warmer, inland corridor of Mendocino County along the Russian River watershed. The Feliz Creek area, just off Highway 101, experiences warm days and significant diurnal temperature swings, which keep acidity lively even in riper fruit. Mendocino County has one of the highest rates of organically farmed vineyard acreage in California — roughly a quarter of all planted acres carry organic certification.

The touch of residual sugar and bright acidity make this a natural match for spicy foods — Thai green curry, Korean fried chicken, or a bowl of cold soba with chili oil. It also works well with soft-rind cheeses and charcuterie where a little sweetness in the wine cuts through the fat.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Stagiaire Wine

Stagiaire Wine is a natural wine project founded by Brent Mayeaux, a New Orleans native who initially studied engineering before shifting to wine. The name comes from his time training as an apprentice — a stagiaire — at wineries in France, including time in the Jura, where he was influenced by producers like Philippe Bornard. He also worked in Australia, where Gareth Belton of Gentle Folk in the Adelaide Hills shaped his thinking about minimal-intervention winemaking.

Mayeaux returned to California in 2018 and initially attempted to farm his own vines. After logistical difficulties managing vineyards spread across northern California, he shifted in 2021 to a négociant model, sourcing from organically and regeneratively farmed sites he trusts. His winemaking operation is now based in a former industrial space on Treasure Island in the San Francisco Bay.

All Stagiaire wines are made zero-zero: no added sulfur, no fining, no filtration, no other cellar additions. Mayeaux uses native yeast fermentation throughout. The 2019 Let's Get Fizzical Rosé reflects an early approach in his catalog — picking Sauvignon Blanc and Merlot together from Feliz Creek in Hopland on the same day, co-macerating them overnight via foot-stomping before pressing, and finishing the secondary fermentation in bottle as a pét-nat.

Mendocino County sits roughly 130 miles north of San Francisco within California's North Coast AVA. The county is divided into two distinct climate zones by the Mendocino Range. The western side, including Anderson Valley, is cool and fog-influenced, ideal for Pinot Noir and sparkling wine. The eastern inland corridor — where Hopland sits — is warmer and more continental, with mean July temperatures often exceeding 73°F and significant diurnal swings that preserve acidity through ripening.

Hopland and the surrounding Feliz Creek area fall within the broader Mendocino AVA. Soils in this corridor are predominantly deep alluvial loam deposited by the Russian River, with gravelly-loam on hillside sites. Mendocino County leads California in organic viticulture: approximately 25% of its planted acreage is certified organic, and the county accounts for roughly one-third of all organically farmed wine-grape acreage in the state. Sauvignon Blanc and Merlot are among the established varieties in the Hopland corridor.
