Fatworks makes the cooking fats that were standard in every kitchen until the middle of the last century and then spent fifty years being told they were the problem: duck fat, pork lard, beef tallow.

They render in kettles, the slow traditional way, with no preservatives, and they call themselves fattitude adjusters, which tells you the tone. Based in Colorado, working with named farms.

Most of what we carry is shelf stable until it is opened, and would rather sit in a cool dark cupboard than on a sunny counter. Anything that needs refrigerating once opened says so on the label.
